Fat and Salt are basic flavor component. But also sweet and umami are. So for most dishes small amounts of sugar and glutamate will make a huge difference. You can have the best spices and herbs but if you miss the key flavors it will still taste bland.

For instance, vegetables like onions, carrots, bell peppers and many others, bring a natural sweetness, while umami is present in ingredients like Parmesan, soy sauce, and many meats etc. Did you know that combining salt and tomatoes naturally creates MSG? Pretty cool, right? :) Salt and fat, on the other hand, don’t always come in sufficient amounts naturally. As you mentioned, they’re key to creating a well-rounded flavor, so I always encourage beginners to focus on getting these basics right. When salt and fat are used correctly, they make a huge difference and can keep food from tasting bland.
