I feel like I was being deceived by the medical system even the holistic ones that push the gluten free ideology. Wow! Thank you. Her story is so similar to mine. My A1C dropped from 7.5 to 6.4 when I started grinding our flour, and I was eating more bread. I became regular. So, I believe so much in fresh milled flour as good medicine! I also inspired my Dr. and a friend, who now started milling!
I just use a teaspoon for any quantity. You can use that and see if it does not work before you add any extra@pattiprater i just try not to use alot of cornstarch in my baking.
What’s exciting is eating REAL FOOD! Delicious real food. I am wearing a CGM to understand what food is doing to my health and to PREVENT becoming a full on diabetic. I see my numbers every 15 minutes on my phone and I LOVE HOW MY BLOOD SUGAR IS LOWERING / normalizing! Yeah bread! Thank you God, I am so grateful. (I m documenting this with my CGM and functional medicine doctor is very interested too.)
To my understanding typical wheat berries are all similar in their nutritional value. Unless u do ancient grains and then they start talking about differences. Especially with gluten structure.
Gluten you get in the store bought flour has no wheat germ and bran needed with the gluten. Kamut branded Khorasan wheat has been studied with cross sectional studies that show anti-inflammatory effect compared against Durham wheat used in Italian pasta which didn’t have as much anti-inflammatory effects. Its gluten structure is also different and more fragile. Many people however, do not find a problem with freshly milled modern wheat. If you grind the granules or sucanot with a teaspoon of cornstarch it will become powdered.
What is the ratio of sucanot to cornstarch?

When people say I eat "the bread" , does it matter what wheat berry you eat?
I use a mixture of red hard, Kumut, a little barley, rye and oats.
