    I just found your channel and love it! When I make meatloaf I line the bottom of my loaf pan with bread slices. They absorb the grease.

    Hahaha! I used to put my onions, garlic, and green pepper in the food processor to hide it from my children. If they saw it in the meatloaf..."they called it a pickle" and wouldn't eat it. So the food processor help me to camouflage it. I got all the flavor but there was no trace of it! I like your recipe and learned a couple of new things. Thanks for sharing this one. I was just about to say I love meatloaf sandwiches. I will toast the bread in the toaster. Spread the bread with mayo and emmm, emmm good!

    Mary has done it AGAIN!! This meatloaf is juicy, tasty, and the best I've ever had. I added a bit of brown sugar to the glaze but other than that I followed it to the letter. This is now our house's favorite dinner. My husband even took the leftovers to work. Thanks Mary for another incredible recipe!!

    I hunt here in Texas so I use Venison wild turkey and wild boar for loads of flavor in my meatloaf

    No matter what pan I cook a meatloaf in, I always line the bottom of the pan with end slices from a loaf of bread. Those slices absorb the grease so that the meatloaf isn't simmering in fat. And, cleanup is a lot easier as well as removing the meatloaf from the pan.

      I usually do this too when I have stale bread; otherwise, I don't mind the cleanup. Plus, I don't mind most of the fat when I'm using grass-fed. I just transfer to another dish after it cools a little.

    They are usually crumbly or dense.

    I love your videos Mary! Now I see the dozen or so things I did wrong on my meatloaf's! I love meatloaf but mine never came out very good. You give great DETAILED direction and include the REASON's why... VERY helpful! Adding this to my repertoire. Thanks for the dairy free alternatives too as I can not do dairy or gluten. Gluten free is much easier these days, but dairy free in recipes is a real challenge.

    Omg Mary I have been cooking up a storm today with your recipes. Now that the meatloaf is in the oven, I can drop you a quick note. First, let me say I am on healthy keto and not a cook so things don’t always turn out or translate well. So far today I have made the oven croutons with some almond flour bread that did not rise properly. I hate to thrown things away and I have to say they are delicious! I have had five already and I need to stop eating them so I can have them for soups and salad. Next I made the fresh bread crumb again with almond flour bread. I think I am going to put half of them in the oven and the other half keep fresh and freeze with my vacuum sealer. As I mentioned the meatloaf (used sugar free ketchup) is in the oven and I can’t wait to try it. I really appreciate you and your channel as it is so much work, but I want to let folks know you can use “normal” recipes and still be doing healthy keto. My health and weight has improved dramatically as I don’t want to go back, but kind people like you putting recipes out can be translated to whatever lifestyle you follow. Sorry for such a long message, but just so excited over croutons again. Silly, but it is the little things that add up and make life better. Thanks again and have a great weekend! P. S.     I have tried everything where it comes to meatloaf. The tried and true from my mom has always worked best. Oatmeal. Quick cooking. The one minute. Plus its better for you than bread

    A tip to use in all types of ground meat especially when using ground Turkey or Chicken. If you mix together 1/2 teaspoon of baking soda with 1 1/2 teaspoons of water & mix it in with the meat (for 1 lb, for 2lbs use 1 teas of baking soda & the same amount of water) it will also help make the meat moist but it also helps the meat to brown which is especially important for eye appeal when using ground Turkey & Chicken. You can also put a bit more in a large bowl & roll whole cuts of meat in the mixture which will help your meat to brown better. It's the alkaline properties which causes this to occur. Learned this year's ago & it works like a charm & doesn't cause the meat to be salty if anyone has concerns. Hope you'll try & see how wonderfully it works. Happy cooking

    I use just ground chuck or ground sirloin and normal meatloaf with onions, minced garlic, salt,pepper, green pepper, quick oats, eggs and a little milk. I make a tomato gravy but that is what I use to blend into the meatloaf and top it with the same. It adds a little zip. I am always open to trying a new recipe so I will try this

    One day, making meat loaf I found I didn't have bread for crumbs or crackers.I found all air had was corn flakes. So mother of invention is necessity! My family loved the meat loaf with the crumbs with the corn flakes.much better than bread or cracker crumbs. Try it once , it's amazing!!!

      @@MarysNest Say Mary - I haven't made the meatloaf yet, but I did make some hamburger patties with an onion gravy the other night and hubby remarked that the meat melted in your mouth! I mixed all the ingredients before adding the beef and using your technique of just 'incorporating' the ingredients into the meat (instead of squishing it to death like I usually do) made all the difference! The patties were delicious. Will try the meatloaf soon! Thanks again.

    Hello, Mary. A friend at church told me her mother-in-law taught her to use about a teaspoon of poultry seasoning in meatloaf. Sounded wierd to me, but I tried it and I love it!

    I've seen veal at our butchers. I was thinking what to make this Sunday. Its een over 20 years since I made a meat loaf. We can't eat pork so it has to be beef chuck sirloin. I've even forgotten the recipe for it. I don't believe in fat free or less fat. The taste disappears. 😋Thank you Mary.

    I really like meatloaf. On keto though, I think I could use pork skins instead of bread crumbs and catsup with no sugar. Going to try it anyway.

    Tomorrow I had planned to make a throwback recipe from my Betty Crocker cookbook. Published in the early 80s. I used to make it all the time but somehow, I forgot about it. It is basically a classic meatloaf but you spread it into a rectangle, lay down deli ham and Swiss, and roll it up. I am going to use the tips you list here. We do use turkey meat, but I have had trouble in the past with texture. I think your ideas will help. I will have to use Thai full-fat coconut milk...lactose intolerant. I don't have any bread right now, do panko bread crumbs need more liquid?
    ETA I forgot, I use fresh veggies, BUT, I do keep frozen riced mixes in the freezer for emergencies. They have butternut, sweet potato, cauliflower, broccoli. A cup of one or more of those would make it easy to up the nutrition without added work.

    I never thought of fresh bread crumbs..I use biscuits..go crazy when I don’t have them and have to either make them or use dry..will just use fresh next time..sometimes..the easiest idea is right in front of your face and you don’t see it lol

      Crushed pork skins are a great replacement. I soften mine with milk. Adds great flavor and no carbs.

    My recipe for meat loaf. Lean ground beef, 1/2 grated apple to 1 full apple. Depending on the amount of meat, finely diced onion, grated carrots, hubby can not have bell pepper, crumbled crackers, Lipton beefy onion soup mix or lipton mushroom soup mix. 1/2teaspoon white pepper, some times I put 1/4 cup picante sauce picking out peppers or applesauce. Put in loaf pan and Bake 350 for 45 minutes to an hour. Then make a thick and spicy tomato gravy, cut meat loaf in 30 minute of cooking to see how done it looks, then put the tomato gravy on it and finish baking it. Till gravy thickens and dries a bit. Do crackers do not like soggy bread.

    I will be using my meatloaf pan. it's 2 pc.pan and it catches the grease from the meatloaf....haven't made one in awhile in it tho...anxious to try it again....Daughter usually makes two, one for me & one for them....love it frozen for sandwiches when I want meatloaf again....love a cold (room temp. )meatloaf sandwich with Mayo....yum I can taste it now....yours' looks delicious.....8/28/23

    When we did not have meat. Mom would make the meat loaf with oatmeal. She would season with beef bouillon and the veggies. Was ok I guess that was 60 years ago.

    Mary sweet, I’ve learned recently that parsley cooked lets off a natural chemical that can cause kidney stones. I like parsley too but I use it only fresh now like in a salad.

      Get it Right - Thank you for bringing up this discussion. Raw parsley contains oxalates so it should only be consumed in small quantities. And yes, when cooked, those oxalates are released. So that is why I only used a small amount...because even though it has oxalates - which effects people sensitive to the development of kidney stones - it is also high in other nutrients. The best way to prepare parsley is to soak, steam, or boil the parsley. The oxalates will leach into the water which should then be discarded and the cooked parsley can then be eaten. But if you are trying to avoid oxalates, avoid eating your parsley raw. Hope this helps. Love, Mary❤️😘❤️

      Thanks so much for visiting and joining in the premiere tonight! ACV actually doesn't need a mother to make it. It needs fresh apples. However, if you want to make "vinegar" using a mother from ACV, you can - it's just not going to have the same potency as real ACV. But what you would do, is put the mother in a half gallon jar - similar to making kombucha and then add water and to fill 3/4 of the ways and then add 1/4 cup sugar. 5 days later, add another 1/4 cup sugar. In about 30 days, you should have a "vinegar". I will add it to my list of videos to make.

    I oil often make my meatloaf with lean ground beef with either chicken or Turkey. I dont like dark meat and I very seldom use the Turkey meat. Most ofter it is the chicken that I do use with the lean ground beef. I have problems with digestion of all cow products and all grains. I can eat potatoe breads. I've never been much into alot of sausage or alot of pork

    You use a serrated knife ro make a clean cut? I threw my last serrated knife away a couple of years ago. Any sharp chef's knife will do the job as well or better. But everyone to his own tools :)

    My mom uses spaghetti sauce instead of ketchup for her meatloaf. I'll have to try it your way.

    I'm confused. Do I use milk and bread crumbs, or bread crumbs and bone broth. Can I use regular beef cubes or I do I need actual real bone broth? Does it matter? Thank you.
