      chavellat - that’s a great question. And I just made a video about creme fraiche which should be edited and uploaded in a few weeks! To make creme fraiche with pasteurized milk or ultra-pasteurized milk, you culture 8 ounces of heavy whipping cream with 2 tablespoons of buttermilk. Allow it to thicken...it can take from 12-24 hours...and you have creme fraiche. That will make about a cup or so of creme fraiche. Hope this helps.

    Mary, I made the plain butter this morning with heavy whipping cream. I was so excited. So far I have made mayonnaise and the L reuteri yogurt.I am so thankful for you. I especially like the way you say not to worry if you don't have everything exact. It allows me to experiment and not be too hard on myself. You are a blessing from God and I just love you!!!

    I am an old man. Makes me chuckle how young folks think they have discovered old ways as if they were new. At Grannies log cabin, we used the old milk from the cows to make butter. Milk was kept in a spring house trough at about 55 deg. Yes, it soured pretty quickly. Was not nearly so complicated to make. It was all we had ever known. Then we discovered sweet cream butter. Oh, the old butter lasted much longer in winter than your prediction, tough it did taste stronger. Now days, where I live, one can not even buy unpasteurized milk. You have to own at least a share in a cow! Thank-You! Just passing on some memories!!!

      I hear you and wish for the old simpler but harder work era. But YES you can buy non pasteurized milk at the NATUREs Fare stores. Choices is also likely to have it.

      @@MarysNest Some people like margarine (grrr, plastic butter substitute?) At best I would call margarine “spread” and butter “butter”. No matter how poor I could be I would always have butter!!!

    I absolutely adore the way you teach! All the "or you could" directions allow for people from any circumstance to manage doing these wonderful things! As an older, practiced cook of 68yrs, I have learned many ways to accomplish a task. Substituting ingredients and even methods can certainly broaden your abilities, can't it?     Hi Mary, I made butter today, watching your video ( I made uncultured), you do an absolutely brilliant job of being the best teacher !
    I live in the UK, and at the minute, butter is so so expensive !
    You are so knowledgeable, and have a wonderful calm way of showing each element of what you are making, which makes it a stress free and an enjoyable experience .
    I love cooking from scratch , as you know exactly what goes into everything you make, and the end result of whatever it is you’ve made, is such a wonderful feeling !

    I've watched half a dozen of your videos since discovering your channel today and found half a dozen things I want to try immediately! Thank you for these wonderfully informative videos, and I also appreciate the way you take the time to offer advice/adjustments for people who may not have access to the ideal ingredients or equipment. You're out here doing the good work of making real cooking and real food accessible to people who otherwise would be excluded.
    Also - and I hope you don't take offense to this - but I feel like you're the absolutely optimal blend of Ina Garten and someone like Bob Ross or Mr. Rogers. I love it!

    I don’t know if you will see these comments, because I have been going back in time and watching your past videos. I don’t want to miss a one, as I’m fairly new to you channel. But I love this video. My dad has long passed away, but when growing up he was a dairyman. What a blessing that was in our life. None of my friends had such fun dairy products as we did. They always wanted to come to my house to play so they could have little cartons of chocolate milk, little Dixie cups of ice cream, ice cream sticks...and on and on. When my dad would get a batch of outdated milk, my mother always made butter. Then she would make homemade bread and raspberry jam and oh my goodness. Thank you for your most enjoyable video.

      I meant to say outdated cream, not milk. But we lived on dated dairy products, because they were still good when they were outdated for quite awhile. We had a great life growing up!

    I did that project with my kids and it was so much fun- seeing the look on their faces when they made butter from cream. Sure put things in perspective too (that butter isn't just from a store). ;-)

    In Morocco. We ferment real raw cow butter. We wash it first with clean water until it’s crystal clear. Then we mix it with good salt like Himalayan salt and we store it for at least six month to ferment and it turns into something we call Smen. Smen is a food and medicine.

    I MADE IT. It was not as simple b/c of my mixer spattering and splashing. It had sat for years and I couldn't tell what speed I had it on. I finally ended up with butter. I DRANK the buttermilk -- oh, it was so delicious. I'm looking forward to make cheeses and bread and other things. Is there a recipe for EXTRA SHARP cheddar? When I was in Europe the couple I visited had a five gallon bucket of cheese in their closet. I can't remember the name of it -- but, it was the tastiest cheese. I asked for it with every meal.     I’ve made butter in the past and it’s quite tasty, but never have I made cultured butter. I have a little over a gallon on my counter right now that I will making butter with in a couple hours. I’m super excited! I am doing a bunch of holiday baking this year for friends and family and can’t wait to use my homemade butter, as well as my homemade vanilla extract. Your videos are wonderful!     I have been making cultured butter from raw cream for years. I make all my butter for the entire year in April, May, June when the cows are on the new rapid growing green grass. If you are familiar with the Weston Price Foundation, you will know that this is the time when the butter is much healthier for your body- much higher Vitamin K content. I freeze all my butter in little round glass tubs. When April rolls around each year, I am just finishing up my butter from the previous spring. Never have I had any sort of problem with freezing my butter for over a year.
    I also would recommend skipping the step of using the cloth for straining. I just use a fine mesh sieve and am careful not to squeeze or press the butter while it is in the sieve. That way I do not lose any of my precious butter in the sieve. Then I use a shallow plate/bowl to dump the butter in after straining out most of the buttermilk. Then I press out the rest of the buttermilk and add it to my jar that I also freeze for use during the entire year. I then wash my butter under a slow drizzle of tap water. (comes from my well, chlorine-free), while I am pressing until the water runs clear. My second of 2 ingredients is salt. I do prefer my butter salted. Yum! I consider this one of the most healthy nutrient dense parts of my diet and spread it lavishly on my toasted sourdough rye bread that I make.

    I laughed when you said a non electric hand whisk might require a lot of muscle - we used to take turns whisking the butter by hand in our house when we where kids( it took a lot of muscle!)
    I forgot to mention -you can make Irish soda bread with raw buttermilk (a real treat and super easy!)

    🙂👍 I made this butter yesterday and the taste is phenomenal! This is the best tasting butter I ever ate. I'm so excited to tell you! I used Lnd. O. Lks. Ultra past heavy whipping cream, and I made the buttermilk sub using the sour cream... I let it culture for 12 hours. I whipped it up in my NutriMill Artiste mixer and I have to say, it really is the best butter I ever had. I also did the math, I am saving at least $3.00 per lb. on butter, and not only that, this is cultured which is better for your health. It's a win win! Thanks so much for sharing this! I will no longer be eating store bought butter. My family loves it, especially my granddaughter. Thanks Mary! You are my Hero! 👍👍👍

    Organic Valley makes a great heavy whipping cream but unfortunately, our store only carries the ultra pasteurized, which is a bummer. BUT, at least I always have my own milk kefir on hand. While I have made butter before, I have never made or even tried cultured butter so this is very interesting and I am just going to have to try this! Thanks for another great teaching video Mary!

    In 3rd grade we made butter by shaking the cream in a jar. Each student got a buttered saltine as a snack. It was so delicious, and such a revelation for this city kid. My husband loves cultured butter which is not always easy to find. He's going to be so pleased that I found your video.

    This lady is just delightful. I enjoyed her accent, presence, voice, tone and personality. What a lovely smile. I just use the mason jar shake technique with my cream from the top of my raw milk. I also use the cream for my coffee. Ive had salted butter stay fresh for 5-6 weeks. Very good point about using previous buttermilk to culture the next batch. Great video and wonderful approach!

    Made homemade cultured butter yesterday followed this recipe with yogurt. OMGOODNESS Mary this butter is the most yummiest Iv'e tasted. Reminds me of my childhood. The method I used to mixing is hand wisking and Boy O boy it was a lot of work I decided to buy a stand mixer. Luv all your recipes and making all of them one by one

    Great lesson. I never realised one could make butter from ultra pasteurized cream! Interesting.. And that nugget about REAL buttermilk thickening up over a period of a week in the fridge!🎇

    Hi Mary.
    I love all your videos. Although I have followed most of these principles most of my adult life, you have given me fresh inspiration.
    I have made butter quite often but never cultured so was really excited to make some after I watching this video.
    I have lamented for years that here in Australia all dairy has to be pasteurised. I am old enough to have been bought up on unpasteurised dairy which I have always believed is better for our health.
    However to my dismay the cultured cream would not turn to butter. Even after an hour of beating is is still like a thick mayonnaise. I finally gave up and put it in the fridge until I can find a use for it. ( cultured whipped cream or add icing sugar and turn it into buttercream icing ) 🤔🤔
    I had about 300 mls of the original cream still in the fridge so I cleaned everything and made butter with that perfectly. It just isn’t cultured.
    I know you are probably busy getting over your incredibly cold snap but if you get to read this I would be extremely grateful for any feedback.

    we made butter in churn with 3 day old heavy whipping cream, served on salted crackers for 5th grade class in Westward Ho program 'traveling' the Oregon Trail. Kids loved it.

    My wife and I made this one too! It is in the fridge getting cold now! I am a bit shocked at how "sour" it is after 24 hours. We may cut it back to 18 on our next run! This is already an amazing butter though that we are going to be so proud to serve to our parents and children!

    I often just take the cultured cream and use that instead of sour cream. It has a great taste and texture even before you turn it into butter!

    Dear Mary, thank you for a very interesting and informative video. i Tried making butter for the first time recently using shop bought double cream. It was great very easy to make in the stand mixer, BUT, it tasted somewhat bland. Like cream. To me it lacked a certain something. So I came across your video and thought I'd give it a go. I have purchased cultured butter in the past and it was too strong and funky. I could even taste it in the cooking or sauces I made with it. So encouraged by your video I gave your cultured butter idea a go. I make my own kefir so I just cultured the cream with a little kefir 1 tbs for 10 hours. At 8 hours I hardly noticed any difference to the cream but at 10 hours there was a slight sour cream hint to it although it tasted fresh and delightful. I made my butter, in fact it went into butter quicker than cream that was not cultured. The taste is totally amazing. Creamy fresh and has a beautiful depth to it. I will always now culture my cream before making butter. By the way the additional cultured buttermilk is a bonus notonly do I use if for scones but in ginger cake it gives it extra leavening I think. Thanks Mary xx

    I just wanted to thank you on your video on making cultured butter. I made it today. It came out. Awesome it is delicious. You’re absolutely right. There’s nothing like homemade. I am so glad I stumbled on to your videos. You are truly a pioneer woman. You are so good in traditional cooking methods. The only difference between my butter and yours as I don’t have a KitchenAid mixer so I used my KitchenAid food processor. I can’t believe how quick it made the butter I don’t even think it took five minutes. It was less than that. The hardest part for me was squeezing out the bottom milk at the very end but I did it. Thank you so much honestly❤❤👍

    Hey Mary! I am an experienced cultured butter maker, but new to your channel. Bravo!👏 your instructions are just SUPER! I have always used those flour sack towels for other things, but now will use in my butter making. A brilliant idea. I have bought so much butter muslin only to spend time picking the lint off my butter before wrapping in wax paper. No more, no sir. Thank you for this lovely presentation.

    Thank you so much for all of your lessons!!! I don't remember my Norwegian grandma going to so much trouble rinsing every bit of buttermilk out of the butter. ( I understand doing so keeps it from going rancid) Maybe because she made cultured butter everyday while bread (also made every day) was baking and they only lasted one day? Also, I forgot I was culturing the 32oz of heavy cream with my home made kefir yesterday and this morning it was completely solid! But, the b-milk and butter are soooooo good. I'll do it deliberately next time!

      I was about 11 years old and started to cook and bake. MOM and dad were both at work. I whipped the cream, extra, thinking fluffier. I MADE BUTTER! What a shock to me. lol. I learned.

    I made butter today. I did not have butter milk, so it is not cultured. It turned out great. Now that I have buttermilk the next batch will be cultured. Love your videos.

And I like that you use very cold water to release anymore butter milk that is left in the butter.       It should be noted that you cannot make butter from goat milk with this method. It requires special equipment.

    you are a WEALTH of information. I never knew the buttermilk from butter could thicken? I used to just pour it back into the skimmed milk and that's what the kids drank. The Amish rinsed their butter with cold water to get rid of the milk - so this was really nice to see you do it. I never really god very good at it. I can no longer find raw milk (so sad). We used to call getting the milk out 'squeezing' the butter.
    So many techniques, but so much time now to watch them. How do you make whipped butter? I was never able to figure that one out.? Did make your no knead bread - it was wonderful! it's my new go-to recipe. wish I felt confident making it in my bread maker.

      Thank you so much for visiting and for the kind words. To make whipped butter, put your room temp butter in a bowl and use an electric handheld whisk to whip air into it. In about 5 minutes you’ll have whipped butter. 🤗 You can also do it my hand with a whisk but it takes a bit of arm work!! 🤗 Do you enjoy making other traditional foods?       @@MarysNest thank you for all the links. I"m sure I'll visit them all. I did send a request to join the FB group. going to make some cultured butter today. I'm keto (when I'm not falling off the wagon) so always have heavy cream, sour cream and butter onhand - but eager to make my own instead of buying it. I've always made homemade mayo and even taught my older brother how to make his own. so simple. I haven't bought mayo in over 10 years. so many ways to make it so I always have to laugh when I see overpriced mayo at the store claiming Olive oil mayo or garlic mayo etc. my hubby's favorite is one I put a whole avocado in along with some fresh garlic. using our own eggs - it has a nice yellowish color to it which throws off some people not used to it.

    I just made cultured butter for the first time using your method here. I let mine sit for 24 hours. Surprisingly, the cultured butter that I made was less yellow than the sweet cream butter that I normally make - using the exact same cream. I am lucky to have some dairies here in my area that sell cream by the gallon, and their milk is cream-line. Good stuff. My yield is generally 13 ounces of butter per quart, plus the glorious sweet-cream buttermilk which makes excellent mashed potatoes, etc.

    It has been y e a r s since I made butter. I always used raw cream. Never have I made the cultured one. May I use a little homemade kefir in the raw, not for the inoculant bcz as you instructed there is no need with the raw, but for flavor. I cannot begin to tell you what a real joy your videos have been to me. We are kindred spirits I can tell you. Thank you most sincerely. I'll keep watching and refreshing and learning.

    I am happy to report that I made butter as you suggested, which tastes delicious. On another note, I failed four times to make a sourdough starter. I probably hold the record! I was using water from the bottle. I have some distilled water I will try next. I will watch your video later this afternoon. Wish me luck! Well, it is five months later, and I was in the process of making butter again. I bought a new series 7 Kitchen Aid, and I unboxed it and poured in the whipped cream cultured with buttermilk. I turned on the Kitchen Aid, and it ran for two seconds. I tried it several times and finally called Kitchen Aid, and they are sending me another one. In the meantime, I get to throw away the whipped cream...that quart cost $5.69. If I were some baker, I might be able to salvage this mess! A few months ago I purchased a $200 Instant Pot and ordered to throw it away when the lid wouldn't open! I tell you, there is lots of trash being sold.

    I make butter all the time, so much cheaper for the same amount and I get buttermilk too, so two for less than 1, I get 2. I am starting my first time of cultured butter tonight to mix tomorrow. I am also going to take the rest of the cultured buttermilk and make my mesophilic culture for cheese, then yogurt for the thermophilic culture. So excited

    Grandma and Mama always made what they called ripe cream to make butter. After we dipped off the cream, we let it set over night at least to 'turn'. The taste is ok, but when I started making my own I always made sweet cream. I'll get my live bugs from my ferments ☺️

      My granny did the same with us 3 kids and Smokey, her wee doggie,. Smokey would get tired out as well cuz he thought it was a great game chasing the jar while we were rolling it. Our treat was always homemade ice cream & if we were good, we got to take turns standing on the chair and cranking the ice cream maker on the kitchen counter. Not sure who had the most fun.. us, Smokey, or grandma. My grandparents lived on-site at a reformatory for wayward boys. It was self sustaining. Grandma worked in the kitchen and grandpa taught auto mechanics. Every morning she got an old fashioned milk container of fresh whole milk and a huge bag of whatever vegetables were ready at the time. Such lovely sweet memories.

    Hi I love your all videos your voice is so therapeutic . I feel so plesant watching your traditional recipes it brings old days back ti life. Especially I love the sour cream and cultured butter. We all Indian still practice this cultured butter before making ghee. It reminded me my child hood my mom making "Makkhan" (cultured butter)and Ghee from local milk . Your videos are very so informative. You explained the difference between different techniques and end product which I was curious from a long time .

    I remember my grandparents hearth beside the fireplace and the butter churn keeping a batch of cream warm as it "soured a bit" both hand cranked and electric churns. Sometimes several jars as well. No one in my family bought butter a d we had both cultured butter and sweet butter. My grandma had a " deep well on her gas stove that had cottage cheese in the making most days. My grandma furnished the cheese and butter to her daughters that lived in town after they married.
    My dad milked her cows for her and ours for us. They were kept together.
    We lived in a ranch.
    My mom and grandma sold cream, milk, butter and eggs. That money was theirs to do with as they pleased.

    I made this cultured butter, came out great! I only had about 1/2 pint of heavy cream and used a little kefir that I make as well, so wasn't even to really enough put in the food processor or mixer, I used a little hand held milk frother! Took a while, and when it started to get thick and separate the frother got so bogged down it quit, too funny.....I'll have to get something better for that step next time.

    I made this butter a couple of times , thank you so much for the video! I am a 12 hour girl on the butter 🧈 12 hours makes it taste perfect (using ultra pasteurized heavy whipping cream) I have a question, can you make ghee with this ?

    This is exactly what my mother does to make Ghee, it makes lot of difference to the regular Ghee or butter. Superb!!!

    Little tip for Mary's nest followers, small mouth canning jars are comparable with most brand blue capped mayo jars. If anyone out there knows what fits a wide mouth let me know. I usually test all kinds of caps to see what else they fit.

    Thank you so much. I have been wanting to make my own butter. Im trying to get away from processed foods and do more whole foods. I also want to start using oatmeal flour and other flours in place if white flour.

I would like to know about a couple things. 1) Many recipes say you can add lemon juice to milk to make a buttermilk substitute, does that apply here? 2) Just as a simple breakdown, why would anyone want to use cultured butter? What are the benefits? What does it impart to cooking? Thank you so very much. Hugs.

    In my childhood, we didn't get any pasturized milk. It was raw, daily. It was boiled and the cream on top was added to this permanent container that had yogurt culture in it passed down generations. It got processed every week or two into butter and buttermilk, but it was always super tangy. It took a while to be able to see the world and find out that there's such a thing as sweet butter.

    This is great advice.....I use it all the time, I rarely buy buttermilk, it has gotten so expensive.....and I really think it's not as good as the real buttermilk from the store, but it works find for Cornbread.....and maybe pancakes.....this is usually all I use it for and sometimes I will crumble a pc. of cornbread in a glass of buttermilk and it's good, I do this all the time with regular milk....when I want something to eat and it's late at nite, I just eat milk & cornbread.....eaten it all my life....if you haven't tried it, give it a try....and usually I don't care for milk just to drink....I only buy it to cook my oatmeal in.....it isn't slimy like when you cook it with water.....and I can eat it better....LOL....Did you ever try it with milk Mary ? I bet a lot of people haven't.....I would rarely eat oatmeal until a friend was visiting my daughter and I happen to be there for breakfast and she said she always makes her oatmeal with milk....so the next morning I tried and I was hooked on it.....I usually have it for breakfast every morning.....
