PopCap did a really good job developing these games, investing deeply into core gameplay and graphics came second (unlike most game developers of today). Do you need detailed graphics to play these games? I don't think so, 1024x768 is more than enough.
Ehh. This sentiment has been around for a long time. I heard the same thing when I was a kid about arcade games and console ports. Then I heard the same thing about the PS1, then the PS2, then the OG Xbox. It was worst with the OG Xbox from my experience. People talked mad shit about it, claiming "graphics over gameplay" even though they just didn't understand the xbox was more powerful and easier to develop for, meaning making good graphics was actually really easy.
The way I see it, as long as the game's visuals properly convey what you're supposed to do and don't hinder your gameplay experience, it doesn't matter how clear or detailed they are. We look at how far graphics have come since the NES and Genesis days, yet many games from those eras have held up visually as well because they add to the game experience instead of hindering it. Most of these games run at either 640x480 or 800x600 (the exception is Chuzzle, which I was able to run at 1024x768), and I don't complain much about the visuals (except Atomica, where some of the atoms are of too similar colors). As long as I can play the game properly, graphics don't bother me to the level many people today do.
