@@toeluver Wouldn't that go against the history/tradition of slurping the noodles? I think this cutting of the noodle is new-ish. From what I have learned, long noodles were a symbol for long life in Asia and cutting them, even with the teeth, was not seen as respectful of tradition, hence, the culture of slurping the noodles... @@Jolene8 as an asian myself, japchae noodles are basically way too long to be slurped whole without actually cutting. they're potato noodles, which can also result in possible choking if not cut small. besides, i don't think i’ve ever heard of the ‘tradition’ you’re talking about because i’ve grown up seeing japchae noodles being cut, but as a whole, other hand pulled noodles and ramen aren't cut as japchae is.
In Indonesia, it's called vermicelli, not noodles. It's cooked with cayenne pepper so it has a spicy taste. Most Indonesians like to eat noodles with meatballs, and it's spicy.

I believe Japchae noodles, at the size they are made for this dish, do fall under the Vermicelli category.

Vermicelli noodles are made from rice, and the dangmyeon noodles used in Japchae are made from sweet potatoes.
There's also Cellophane noodles which some call Chinese vermicelli and those are made from Mung Beans.
