    Chinese hot pot is great for friends and family. Everyone can pick or bring their favorite ingredients. You can really tuck in and enjoy the time with them. That is something deep inside our culture. In my last video, I show you how to make a spicy hot pot base and today we are going to use it to make a classic Chong Qing spicy numbing hot pot.

    *Ingredients for the Side*
    - Beef slices [肥牛片]
    - lamb slices [肥羊片]
    - marinated pork [调味猪肉片]
    - Fish slices [生鱼片]
    - Peeled shrimp [鲜虾]
    - squid [鱿鱼]
    - beef balls [牛肉丸]
    - pork balls [猪肉丸]
    - fried tofu [油豆腐]
    - Japanese tofu [日本豆腐]
    - shiitake mushroom [香菇]
    - noddle mushroom [金针菇]
    - Oyster mushroom [平菇]
    - Baby Chinese cabbage [娃娃菜]
    - Spinach [菠菜]
    - lettuce [生菜]
    - lettuce stem [莴笋]
    - taro [芋头]
    - lotus root [藕片]
    - Mung bean noodles [绿豆粉丝] [Amazon Link: geni.us/gHnjg]
    *Ingredients for the Soup Base*
    - 2 cups of homemade soup base [自制火锅底料]
    - 8 cups of chicken stock [鸡肉高汤]
    - 1.5 cups of hot dried chilies [干红辣椒] [Amazon Link: geni.us/hmTd]
    - 1/4 cups of Sichuan peppercorn [花椒] [Amazon Link: geni.us/Gw7LP]
    - Few stalks of big scallion [大葱]
    - Few pieces of spring onion [小葱]
    **Instructions **
    - Hotpot is very easy and flexible. Just prepare the sides that you want to eat with the hot pot. Then make the hot pot soup.
    - Put the soup base into the pot then fill it with chicken stock. Bring the pot to a boil. Add the dried hot chilies, Sichuan peppercorn, big scallion stalk for extra flavor and also for the presentation.
    - Before we started eating, add some salt and taste it to adjust the broth because every hot pot soup base contains different amount of sodium.
    - You also want to have some extra stock on the side because as the time goes by, the liquid will evaporate and you will have to add more broth to the pot.
    - Add few pieces of spring onion at the end. Now you can bring this pot out and serve.

    I'm a Vegan who is an American Australian. I have many Chinese Hot Pot Parties. I looooove all your tips and tricks and will certainly make your sauce in the previous video. You really inspire me. I am new at making hot pots. Your video gave me some more insight. If you want to watch a couple of my hot pot videos you can see from my table it's all Vegan. My favourite hot pot mix was Liuyishou Hot Pot, but I can no longer find it in Australia. So now I will make my own with your recipe. I always added extras to the Liuyishou Hot Pot mix. I especially love the stock tip. I put stock in , but didn't think about having a bowl of stock ready as we use the hot pots. I subscribed to your channel and I look forward to learning more from you. Thank You again for all the tips and tricks.

    How did the beef balls turn out to be so dark in this video? I followed your recipe but they look rather grey instead of dark brown. Did you fry them before freezing?

      I didn't fry them. They should be grey. Maybe it is because the lighting so the color looks different on the camera.

    I don't see where you told us how long to cook the hot pot once all ingredients are added. If extra stock is needed, you must be cooking the hot pot for...how long? Thx.

    Why do you use fork when eating hot pot?

      Because I only have 6 pairs of chopsticks in my house and there are more than 6 friends came to the party that night so I have to use fork. Using fork is not a big deal and Chinese people use it often anyway.

      Souped Up Recipes i think chopsticks are core to chinese culture. Just like Chinese characters (although you use pinyin to type... that's 50% loss already). Hope you guys dont ever forget that. Many things were lost in China and transfered to Japan. Hence, Japan looks so much cooler and sophisticated than China. Most chinese formal etiquette (from the elite) never trickled down to the chinese civilians because China became chaotic.

      Souped Up Recipes chopsticks have been associated with chinese culture...and they are the only things that Chinese get associated with in the west. Soy sauce, tofu, hot pots, cherry blossoms, wooden architecture, paper windows .. everything is associated with Japan... despite most of those were originally from China. Keeping cultural identity is important.
