EASY COCONUT CAKE RECIPE | How To Make Coconut Cake

  • Today I am making an easy and delicious coconut cake that will have people guessing if it's made from scratch. This recipe transforms a boxed cake mix in to a super moist and decadent coconut cake. With the addition of a delicious and easy coconut butter cream frosting makes this cake super delicious.
    INGREDIENTS
    15 oz Box of white cake mix
    10 oz coconut milk
    1/3 cup melted coconut oil
    3 oz egg whites (or egg white from three large eggs)
    8 oz (2 sticks) softened salted butter
    3 cups (345 g) confectioner's sugar
    1 tsp coconut extract
    2 to 3 TBSP of coconut milk
    4 oz sweetened shredded coconut
    CAKE
    In a bowl combine boxed cake mix, coconut milk, egg whites, coconut oil and mix well
    grease and flour two 8 or 9 inch round cake pans
    evenly divide cake batter in to cake pans
    -Bake in a preheated oven at 350 degrees F for 28 to 31 minutes
    remove from oven and allow to cool for at least 20 minutes before frosting
    FROSTING
    Combine softened butter, room temperature coconut milk and coconut extract in a bowl
    -whisk by hand or with an electric beater until the butter is pale yellow, smooth and creamy
    -then add confectioner's sugar a half at a time
    -mix until butter cream is smooth and creamy
    -once you have frosted your cake, allow to set in the refrigerator for at least 1 hour before serving

    I loooove the subbing of Coconut Oil for regular oil in this Recipe! Looks fantastic. I always add some Cream of Coconut/Coco Lopez in my icing for Coconut Cakes. It’s sweet and yummy. 🥥🍰❤️

    I bake all the time. I honestly have never had a from scratch WHITE cake that I liked better than a box cake. They just have a heavy dense texture I do not like. So I am so happy and excited to try this recipe!!

    I’ve never baked my cakes on 350 a chef one time years ago told me to always take my temp down 25 degrees. He said that the cake will be more moist. Even cake mix cakes I always have taken his advice and he never steered me wrong. It looks so good! Thank you!

    Looks delicious! Semi-homemade works for me, I do the same for Italian Cream Cake, I use a French Vanilla cake mix, chopped pecans, toasted coconut, and make a cream cheese frosting with more nuts and coconut for the top. I enjoy all your videos!

    Oh my, I remember the good ole' days when I could've had something like this with a nice cup of coffee.
    Pretty soon I'll be back to being able to enjoy these foods at least twice a month.
    I've been healing and detoxing from pancreas, gallbladder and liver. I'm disciplined enough to stay away, but I still love watching every video you do, and others I'm subscribed to.
    You did a fantastic job for not having an electric mixer. You showed it can be done, when there's a will there's a way.

    Guchujang MaMa Simply Mama Cooks. What a great recipe. I made this cake today for my Grandmother and it came out superb. As you mentioned in your video you're open for suggestions to make your recipes better. So i did tweak the cake recipe just a little. I added an additional 1/2 Cup of Swan's Cake Flour to the Duncan Hines Cake Mix Sifted. 1 Stick of melted Butter instead of Coconut Oil. 1/2 Cup of Sugar. 1 tsp of Vanilla Extract and 1 tsp of Coconut Extract. 4 large Eggs and 1/4 Cup of Egg Whites room temperature. 1/4 Cup of Sour Cream. 1/2 Cup of Sweetened Coconut Flakes added to the Cake Batter and mix well. The cake Icing you used is absolutely great and i felt it didn't need any changes. Bake at 350 degrees. What a GREAT RECIPE Thank You very much for sharing.

    Your videos always look great to me. I have worked as a professional cook for 20 years, and see no real problems. Just a great home "chef" lol. BTW your cake looks as good as the store bought one we just ate the other day.I was going to mention baking the coconut, but see another poster already did. I prefer toasted, but even unsweetened coconut is good, just depends on how sweet you like your desserts.One tip n the icing is that you will almost always have enough for a two layer 8inch cake from a normal icing recipe.Keep up the good work, and great vids. P.S. I always use salted butter. I just think it has a better taste. Just mho.

    Great recipe! Just made for my son's 48th birthday. Suggestion: after you grease & flour pans, add a layer of parchment paper (cut round to just cover bottom) makes removal from pan a breeze🤗

    I pay good money for coconut cake as i'm no baker but guess what ? i'm going to make this " fake it till you bake it " cake , it looks delicious !! about using hands , too use my hands when i cook but as i'm a germphobe i wash my hands very often and my hands are very clean and as you said the critics are not going to eat the food so just chill , love and hugs

    I don't know if you have used frozen coconut before but it is so much better. Also alway use more oil than called for and you will always have a super moist cake. I always use 1 cup.

    Since you did ask for tips and tricks... if you place your coconut milk on the fridge the night before (or like 1/2 hr in the freezer) you can separate the solids at the top from the more liquid part at the bottom of the can and use the solid with the butter (or instead of, if dealing with lactose intolerant/vegan guests) for a “whipped cream” type texture on the frosting while keeping all the flavor!

      Yes! Love this idea. I do make a tres leches cake using coconut milk for my lactose intolerant grandmother. I will try this to make a whipped frosting of some sort instead if using cool whip. 😁👍

    A tip I do is save a little of the cake mix before it is combined with anything and flour the cake pans with the dry cake mix, then just put the flour that is left over from dusting the pan in to the mix. When the cake is done, instead of having flour on the sides or bottom, you'll have the cake mix :)

    Wow, for 2 years ago I'm greatful your recipe Is still up. You used cake mix, but I didn't even think about using the coconut milk, and the coconut oil. I already used the coconut oil
    Flavoring in my mix cake, in a box; but now to ice it. I'm using vanilla flavored icing. I put 1 teaspoon of the coconut flavor, and
    1/8 cup, maybe I just put 3-4 pinches of the flags. Thanks for putting up your recipe
    2yrs. ago, my coconut cake might not smell as good as it dose. This is 2021

    My mom would use yogurt, just plain yogurt, in box cake mixes instead of butter or oil and applesauce in like the carrot cakes instead of water. If I remember correctly. I don't like coconut too much. But my husband loves coconut cake. I think I'll try it for him. I prefer to cook and bake from scratch but sometimes you gotta fake it till you make it. I always look forward to your videos.

      I love using yogurt in baked goods, but never thought to use it with boxed cake mixes. 😁👍

      @ Because all of us kids are grown and none of us live near her, she doesn't make them anymore and cant remember her measurements she used. My grandma did it too. I remember when we'd visit, she tell me I could eat any yogurt in the fridge I wanted but leave her plain alone. She used to make these bomb oatmeal applesauce cakes and let us have them for breakfast. And no one ever got the recipe. All I remember that went into it was 'day old' oatmeal, yogurt, applesauce and raisins.
