Just made this and it’s really delicious. One of the best vegan meals I’ve made, and equally loved by the carnivores. I made the ricotta one day, the gnudi the next day so it could chill overnight, and the pesto a few hours before serving. (As long as you cover the pesto with plastic wrap so that the wrap actually touches it, it doesn’t brown too badly). Also, because you can do the work over three days, it feels like any easy-prep dish. Thanks Lauren!
Is not because of the flavour that they use oil and butter, it's because the butter burns easely and the oil prevents that from happenin! Love the recipe I'm defenetly trying it😍

This reminds me of something that is very classic in Poland called "kluski slaskie" and it these little balls that are about this size that you later press your thumb into; usually made with flour, corn/potato starch, cottage cheese, & water...I'm sure tofu would be great in it too!
I will need to try these ones... I'm not into gnocchi because of the texture. These however look like the perfect texture. I think I would serve these as appetizers.. finger food!

How delicious!! In Russia we have similar dumpling but they are meant to be sweet: syrniki. I have made them with tofu as well but just made them sweet with sugar instead. I must try the savory version.
