I'm making Filet Oscar for Christmas, so thanks for the refresher course, although I'm keeping the crab simpler with a light butter saute and also searing then sauteing the filers with butter, garlic and shallots.
I’m guessing Vitamix has changed their blender design since you got yours. I made this last night, dropped my egg yolks and lemon juice in and turned the blender on its lowest setting. Then I watched the blade spinning above all the contents of the blender. I just kind of sloshed it around and forced the eggs into the blade and then put it back on the base and started adding butter. It worked fine, but definitely not as shown. Was kind of funny to see happen just as we are ready to plate. Made for a bit of comedy as my wife watched me struggle for a minute.
