Did your yeast rise or not I think so there is problem in Yeast. Like sometimes the Yeast shelfline will be dead and hence it won't rise or it can be you didn't proof it well

Your yeast must have gone bad! Bombolinis puff up due to the yeast in them!

As an Italian 🇮🇹 i would say that either way is fine but would recommend it while the nutella inside is still warm

We have used the instant dry yeast but have done the activation step as a safety measure to check if our yeast is alive or not.

This was Instant Dry Yeast. You can also use Active Dry Yeast but then you would have to activate it by putting in warm water.
