    That is a pretty incredible smoker you made.. you should be extremely proud to have a nicer smoker than probably 99% of people, even professionals have.. Its so overbuilt and well made it even puts US made commercial smokers to shame.. I'm jealous!!!

      Thank you for watching! We only recently learned that Franklins Smokehouse had burned down and were shocked by the news. We hope they will recover quickly but it sounds like there reopening soon.

      moncorp1 Inc It supersedes the Spanish as well. As far back as we have recorded human history man has been smoking meat over coals. No state or country owns the rights to inventing smoked meats.

    Gas tanks are usually purged by pumping them full of water. You did a good job on this first time project. :)

      ColKorn1965 that’s what I proposed. The old man wasn’t having any of it. To his defense I have to say that the valves had been missing for quite some time and the inside was almost completely covered in rust, so it was pretty obvious that there was no gas residue.

      With age comes wisdom. In my case age and experience gave me paranoia when it comes to gas. The old man was right in this case.

      @@jonasfreitag What wood are y'all using to replicate Franklin's Mesquite flavor? I recently smoked some ham and ribs on a trip to Lithuania, and all I could find was Pecan

      Franklins uses Post Oak, not Mesquite. Mesquite is used mainly
      South of Austin. It's a little heavy on the tar but tasty depending on what you are smoking.@@daddyfred03

    There's a restaurant in Houston named "Taste of Texas", though they mostly do steaks. Your smoker looks great. They're a common project for metal shop classes in Texas. I built one in high school that was 20" around and about 6' long, and I thought that was big...

      @@jonasfreitag yea to be on the safe side myself i own a pair of sunglasses that are rated for torch cutting and made by Hobart so even though i still can't look directly at the weld i can work around it and be mostly fine.

    The fact that you Give Aaron Franklin Props is very good , I think Your work is Awsome . To take on a nice project like this is a rather large one . It is so very easy to Have people make ugly remarks , The fact is you did and They are watching you . Hat of to you . The term P. P .E. Invest in it . Safe is a great way of life .       Yeah, Aaron is the man. And so humble about everything he has accomplished. Had the honor to speak to him briefly when we visited Franklin BBQ in 2016. He just waltzed in past the line of 200 people, greeting regulars, giving autographs, always with a smile and still finds time for a few words with anyone interested. Great guy!

      I used to have Aaron's video posted on YT of him making his smokers. I didn't have it monetized, just had it up because you couldn't find it anywhere. PBS must have been unhappy because they made YT take it down. It was a great video on making smokers.

    Loved the video. Welcome to The Republic of Texas! We've been welcoming those of the teutonic persuasion to our part of the Texas Hill Country for nearly two hundred years. I live a little south of Boerne, which is just south of Fredericksburg and New Bruaunfels........you get the idea. You're right about the pipeline scraps, make the build a lot easier. BTW you might try marinating your WHOLE untrimmed brisket in a gallon of white wine vinegar and a bottle of zesty italian dressing overnight before you cook.       As a welder this used to be propane tank is NOT the right! Over time heat will release toxic particles which will land and enter the meats !!!

    One advice for hot work on used gas tanks, ive done it a few times for a few projects like an 150 liter aux air tank, if you have two openings, run a shitton of compressed air thru the tank, and if you want to be extra sure that slowly degasing buildups cant bite you in the butt, flood the whole thing with inert gas like argon, then cap it and start working. Or get a gas tank used for inert gas, ask you local cooling system service companies or technical gas suppliers if they have any used ones on hand, those tanks and bottles often get scrapped due to failing their TÜV checks.
    Hope this helps anybody deciding to be crazy enough to cut into a used tank for flamable gas.

    Your english is really good. To cut down on flair ups when plasma cutting or welding on something that had gas in it is to fill it with soapy water let it sit for a couple of days then drain it and let dry fully. Make sure it is vented well before you attempt to cut or weld and also use a lit match and place it at the opening to see if there is any gas vapors still there. If nothing happens then it is safe to cut and weld on.

    You guys should check out Allen’s welding/woodworking. Dude builds the best bbq pits on TH-cam. He even had a 55 gallon barrel blow up and talks about it. This build was a beast too!

    Nice setup!!! Only feedback I would say is your stack needs a cover, we use angle iron to cone over like a little roof... Avoids water entering...

    Great start we do it low an slow in south ga on bbq and smoking Texas is known to use big heavy counter weights I don’t quit understand that is it for looks other than opening the door it’s a bigger cost when building along with time insulated fire boxes great idea in that neck of the woods

    Thank you for posting your build experience. Gives myself courage to consider undertaking such a project!!
    Dont worry about your welds they are perfect for such a project and then some! It takes time. Consider pointing your torch to the much thicker material so that you wont burn the slimmer material. Up and down pattern while welding works wonders in most situations.
    Also try to keep in mind when tack welding that your weld pulls the piece towards your weld. So its best to tack weld in "neutral" places to keep it squared.A good tack weld can hold up to 80kg of force.
    But who cares about welding when you are tasting that nice piece of meat?

      @@jonasfreitag hell I've been smoking since I was 16 now I'm 30 so not too many years of experience but I know everywhere I was stationed overseas I would be the one smoking! Hows the business going and also have you guys thought about setting up near a military base I know them dudes would love a taste of home

      Robert Fitzpatrick I actually contacted Ramstein Air Force base with is the closest US base from where we are about doing something for the guys and gals stationed there, but they never got back to me. Any idea who I should talk to?

      @@jonasfreitag man if possible set up right near the gate if not contact the public relations and ask to speak to either their chief or commander because you've called before with no response. It shouldnt be a big deal to even get on base they usually do alot of community outreach events so ask if they have an airshow or something of that nature that you can set up at. I'll see if I still have any buddy's at ramstein as well and get back with you on that

    Awesome watching this while my little smoker is making me some bacon!
    Only note would be for the little helper near the end to use some ear plugs when helping you get those parts tacked on so he doesn't get a hot spark in the ear. :D
