This might be sacrilege, but there's a technique for spiralling brats to give them more surface area for grilling and increase tastiness. It would probably allow more penetration of marinade as well. Chef John at Food Wishes just demonstrated this on a YT segment recently. You basically insert a wooden skewer through the length and cut around in a spiral. The skewer prevents too deep cutting.

I actually found if you drop the raw brats in a pot of liquid on the grill and let that come to a strong simmer, and then finish them on the grill, gets you perfectly cooked brats every time. I also found after pre-cooking a few dozen that way, the liquid becomes flammable from the brat juices.

I've worked for a master chef and many chef who have worked and studied all over America and I will say this actually sounds like it works very well. Think I will be making some homemade ol fashion brats this summer as a test run .. cherry citrus and brandy infused brats sounds like I am going to leave put the bitters though quinine is great for drinks but I dont know about eating it .. maybe a nice mustard glazed with it would work .. I am pumped this sounds good

We use the old fashioned beer & onion marinade - Use German Kraut it is the best ! Yeah use that beer some yuppie brought to the last cook-out that nobody would drink...or Guinness

They have both chicken and turkey brats out there. I know a meat market that makes their own in several different flavors and I was thinking all of them would still taste really good with this marinade. :)
As a Wisconsite living in Alaska..I recommend Alaskan Rockfish in a PBR beer batter..some cheese curds..an Old fashion..and two tree beers to wash it it down..

Actually sounds pretty good. Cherries & orange with porkchops is good. Makes sense to have same flavor profile for a brat.
Try MANGO with PORK chops, or the like: The sweet and peppery taste of the mango goes great with the meat!
