Try apple sauce and pork chops. Growing up my parents knew if they were serving pork chops that there needed to be apple sauce on the table for me to dip them in.
Charlie, watching you in a cooking segment is like watching an amateur cleaning a loaded pistol. One wants to jump in to help, but is paralyzed to do so because one feels that something special is going to happen.
I’m with you on this. I watched one of my bros trying to light his grill to what he felt was the proper flame level once. I think he finally ended up using over half the bottle of charcoal lighter fluid. After a while he glanced up and noticed I was filming. He asked what I was doing and I said I wanted to be able to show the paramedics exactly what happened. Amazingly nothing actually happened that time.
"Like a '78 Chevy in the snow, pump the brakes a little" had me dying, I used to drive my great grandfather's '78 Chevy C10, and it was absolute shit in the snow.

i made my own sauerkraut and its better than any store bought so now i need to get some brats its gunna be a good old fashioned weekend for sure thanks charlie
I saw bacon of different flavors for sale at the Pick n Save meat counter and had to have them clarify what they meant by "old fashioned". Needless to say, I was a little disappointed they simply meant regular, thick bacon.
Greetings. We call cool whip containers Dutch Tupperware here in south central Iowa. Usually storage for frozen fish leftover ham balls or potato salad. I have never left a family function without one.
Thank you for the important details of Grandpa’s recipe. Must use buck knife 🔪 two, TREE or even four times. Love it!! Also, LOVE sauerkraut! That’ll make everything taste perfect! 😋
"like a 78 Chevy in the winter" too true my buddy drives a 78 nova that he has to pump the brakes before semis start braking to stop in the next state over lol
Awesome recipe! Many culinary masterpieces happen by accident. I'd work on the fine points (like not piercing or burning the brats) though, Charlie. XO ❤️
My dad's family is from Three Lake, WI. I smile everytime I see Charlie's videos. I loved being out there. They are wonderful people of excellent and hardy stock.
Those actually look pretty tasty! When I saw this title, I wasn't sure if it was about Old Fashioned Brat(wurst)s or Old Fashioned Brats (like Bart Simpson).
I lived in Fond Du Lac while Mr Bob was the cook of Walleye Week...it is considered a sacred rite and privilege up here in Wisconsin to be the brat griller
I am not from the area. I just used to drive through Darien on my way to pick up in Walworth. What is the reference that I am missing? I know the reference in the video, to the Cow Palace in Fond du Lac, but I don't remember seeing anything named that on 14 when driving through Darien.
This video has caused my May Long Weekend calendar to go from barren to pregnant with liquor and sausage. I will forevemore refer to "May Long" as Charlie's Weekend.
What are you talking about? The jar was already half full from the other ingredients before he added the primary alcohol. He did do 3 to 4 fingers. Are you blind or did you actually think he filled that whole jar with brandy?
'm starting to sense a contest coming on here. He did say youse guys should perfect it. The Charlie Berens Old Fashioned Brat Festival where everyone makes their version and he judges the best one. The contest should be held in a Fleet Farm or Kwik Trip parking lot. Probably Fleet Farm, there's more room, and if you forget any equipment you can just run inside.
I actually found if you drop the raw brats in a pot of liquid on the grill and let that come to a strong simmer, and then finish them on the grill, gets you perfectly cooked brats every time. I also found after pre-cooking a few dozen that way, the liquid becomes flammable from the brat juices.
~thank you~ for using charcoal also that was the proper reaction to a brat casing bursting. griller has the right to cuss about it, all backseat grillers are allowed one good through-the-teeth inhale or an "ah geez" under their breaths as they take a sympathy pull on their beers/cigarettes.
This might be sacrilege, but there's a technique for spiralling brats to give them more surface area for grilling and increase tastiness. It would probably allow more penetration of marinade as well. Chef John at Food Wishes just demonstrated this on a YT segment recently. You basically insert a wooden skewer through the length and cut around in a spiral. The skewer prevents too deep cutting.
Not gonna lie, this looks delicious. I prefer bourbon to brandy for my old fashions, but I think either would go great with brats for a change of pace vs beer brats.
I've worked for a master chef and many chef who have worked and studied all over America and I will say this actually sounds like it works very well. Think I will be making some homemade ol fashion brats this summer as a test run .. cherry citrus and brandy infused brats sounds like I am going to leave put the bitters though quinine is great for drinks but I dont know about eating it .. maybe a nice mustard glazed with it would work .. I am pumped this sounds good
The stupid TH-cam did not notify me you had a new video!!! I love you, I love these clips, I need them to stay sane! I’m in California wishing I was a Wisconsinite
Double finger dipping is really the only proper way to get maraschino cherries out of the jar when you're eating them in front of the open fridge at 2AM. It's especially refreshing during the hot summer months
We have a medley of different containers. You just never know. One time I had what I thought was a container of cottage cheese so when I went to make something requiring cottage cheese, I didn't buy any. Of course, halfway through the recipe, it was spaghetti leftovers. Cheez and crackers!!!
We use the old fashioned beer & onion marinade - Use German Kraut it is the best ! Yeah use that beer some yuppie brought to the last cook-out that nobody would drink...or Guinness
this actually has a ton of potential. Do the old fashioned marinade and then fry the Brats and add in the marinade to deglaze the pan. cook down till it's a syrup and the brats are cooked. Top with mango and bacon on a grilled bun.
I said it before and I will say it again: Charlie Berens is Wisconsin's gift to the rest of America!
Charlie Berens is Wisconsin's competition to cheese gift baskets.
Well that, and you know... your guys' awesome ass CHEESE! Greetings from your Minnesota neighbor!
Even tho he went to cali for a bit to sell out
And the world!
He should go to Cali and make as much as he can of himself. I can picture him having his own comedy tv show.
midwest nice vs southern hospitality needs to happen
Yes it does
Vs? No.... Ultimate team up.
Give ya'll a good ol' "Oh bless your heart"....
From living in Wisconsin to living in Alabama, there’s no such thing as southern hospitality. But tell your folks I says hi
The difference is that in the south, we know when to stop. Unless it comes to fried chicken, long live the lord’s bird.
Actually sounds pretty good. Cherries & orange with porkchops is good. Makes sense to have same flavor profile for a brat.
Try MANGO with PORK chops, or the like: The sweet and peppery taste of the mango goes great with the meat!
Pineapple
Try apple sauce and pork chops. Growing up my parents knew if they were serving pork chops that there needed to be apple sauce on the table for me to dip them in.

Yeah, sorta like watching my Duck Dynasty neighbors here in North Louisiana. What are they up to today? 😳🤦♂️
I would cook the sauerkraut in the leftover marinade, fry that up on the old cast-iron skillet oh so good!
You betcha. My father did the same.
I hope you know that this will be going on my cook book. EXACTLY how it was said, all seven pages.
LMAO "Germs cannot spread through cherry juice. Them's just facts." I died.
I moved away from the midwest a long time ago but this guy brings me back.......love it!!
Why you move ?
It's the forgetting the plates that hits me in the truth spot.
“Two or tree after a baptism” 😂 The Catholic way. Jesus’ first miracle was keeping the party going at a wedding with some wine, God Bless. Much love Charlie
Baptism is one thing, but by golly funeral afterparties... It's enough to get the saints in heaven drunk.
"....right next to the nightcrawlers." Do not get so lit that you'll confused them with the brats.
i made my own sauerkraut and its better than any store bought so now i need to get some brats its gunna be a good old fashioned weekend for sure thanks charlie
Some friends of mine do the same thing... make about 250 jars in the fall. It's a great production and even a greater party.
Outstanding

Getting ideas here; instead of kraut and marinade separately, cook down some red cabbage with the marinade to top the brat with.
Great idea!
Just a thought but maybe they burn more easily because of the sugar in the cherry gunk?
Those actually look pretty tasty! When I saw this title, I wasn't sure if it was about Old Fashioned Brat(wurst)s or Old Fashioned Brats (like Bart Simpson).
I was like "He's not talking about the dolls, is he? Doesn't seem like his style."
I thought he meant an old fashioned way to cook them, like over a camp fire.
