How Manchester's Michelin Star Burger Is Made

  • Mana, Manchester’s first Michelin-starred restaurant in 42 years, Mana, re-positioned themselves as a takeaway burger joint, offering up a burger that is probably going to be the greatest burger you’ve ever tasted in your life.
    The man behind the burger, and Chef-Patron of Mana, Simon Martin sits down with us to discuss everything about it. As you’d expect, it’s an intricate creation using local suppliers, with a Lake District Farmer’s Belted Galloway smoked beef patty (comprised of shin, brisket, and rump cap), American-style cheese made with St Andrew’s Cheddar and Cloudwater beer, Koji and dill mayonnaise, iceberg and green onion paste on a potato and brown butter bun by Pollen Bakery.
    Ultimately it’s comfort food at its very finest, and as Simon explains his favourite burger places in the city, we just can’t help but bring our attention back to what he’s created - and how it’s put a shot across the bow of the city’s current takeaway offerings.

    £17 is actually quite a bargain for a Michelin* burger, this is about as far as you can get from a big Mac.

    I’m surprised there hasn’t been a Michelin star awarded to any small bbq joints in the US. They are already nationally recognized. I understand, it is a special process.

      I highly doubt that they received a Michelin star because of that burger... They just happen to be a michelin star restaurant serving burgers. Which bbq joint did you have in mind ?

      It's because it's not about food, or ambience it's about fashion and historical strict way of eating. It's a folly.

      The actual answer here is just that the whole Michelin star system is mainly a European thing. There are Michelin starred restaurants in the US, but very few and only in major cities. It doesn’t mean nearly as much to people in the US as it does in Europe.

    I definitely like the way they've made this. I'm certainly going to look into this iceberg lettuce smattered in "green sauce" technique! Green onions and dill.. My stomach immediately perked up... LOL And also, the Brown Butter. Sadly, I'm not at all familiar with this. Doing research now.
    However, I would say, in my cuts of meat, I also add the juices from cooked red onions and garlic with melted butter. This just draws out the flavor of the beef. I also add just a small hint of Oak and Mesquite smoke liquid in my beef to give it that rustic outdoor kind of flavor... As for the homemade cheese, can't touch that! But I do special order my cheese directly from Wisconsin, and they've not let me down yet.
    Whenever I have friends over, I've not had one person suggest any changes, but many demanding I give up the recipe... LOL

    Should try buffalo bar and grill in worsley I think they have the best burgers in Manchester

      Mana. Ancoats manchester. Part of of manchesterst northern quarter, know for hipster bars , rude milenial, staff and services charges and slow service in most restaurants in that area. If you watched the video you would have heard it mentioned at the beginning

      It’s a burger from a Michelin star restaurant. The ingredients and labour probably probably make up a third of the cost. Most decent burger restaurant charge £10-12, so to feast on a gourmet burger of that standard is totally acceptable at that price.

    Way too complicated,burgers are best when they are simple.Id prefere In and Out to this.
