Homemade Spiced Pineapple Jam

    Today I had some free time to make some jam, spiced pineapple jam! So good!
    8 cups crushed pineapple
    4 cups sugar
    1 tablespoon ground cinnamon
    1 tablespoon ground cloves
    1 box pectin

    When you said spiced jam, I thought of Fiesta Ranch, no? Doesn't t it go with most everything? Guess there is a limit. Cinnamon and cloves with the pineapple sound delicious.

    You mentioned a spoon guard for splatters, did you ever make one for you mixer by poking you mixer blades through a paper plate before putting them into the mixer? Why couldn't you do the same thing for a wooden spoon handle, I would use the smaller coated dinner plate so it has some structure and not a flimsy straight paper one. I will have to try that when I get a chance.

    Don’t think pineapples have as much natural pectin like apples, berries, etc. That gizmo too looked awesome. Have to say would not have let it bubble that long without it saying temp not yet reached. So if anything, I learned to really check temp instead of jusy following the “boil for ?mins” instructions. Tfs

      Unfortunately, the answer is no.
      While they both have thickening properties, they act upon the fruit in jams and jellies differently. Pectin is a water-soluble fiber that is divided into very fine particles. When heated with a sugar solution, it takes up position, bonds with the sugar molecules and expands in a way that makes it nearly impossible to separate out from the rest of the product, thus creating a stable, gelled preserve.
      Clear Jel is a modified cornstarch that is recommended for canning because it doesn’t lose its thickening powers after extended heating (conventional cornstarch starts to break down at high heat and also doesn’t thicken high acid liquids well). Clear Jel thickens by creating bonds between the water molecules and the starch molecules. As you heat those bonded molecules up, they continue to expand until they form a network of sticky bonds that keep the liquid thick. It’s a very different process that how fruit pectins thicken, and were you to compare a well-set cherry jam and a cherry pie filling, you’d easily be able to see the difference in consistency.

      Put a small plate in the freezer while you're making your jam. When you are "done" pull the plate out of the freezer and put a bit on the plate, turn the plate sideways. If it is not set, you'll see it.
