The Secret Ingredient for the World's Best Fried Rice

  • Fried Rice is one of my favorite things to eat and Spam Fried Rice is a comfort food for me. My mom and grandma used to make it for me all of the time as a kid.

    For any fried rice recipe that I make it is a "kitchen sink" kind of meal where I throw together whatever is in the fridge that needs to be used up. I don't follow a set recipe and it's different every time. Here is a rough estimate of what I used here.
    Spam Fried Rice
    70g of diced onion
    60g diced carrots
    60g diced mushrooms
    60g diced zucchini
    7.5g minced garlic
    20g scallions
    45-60g oil
    120g spam
    2 eggs
    30g soy sauce
    10g sriracha
    5g sesame oil
    2g sesame seeds
    600g leftover rice
    1. Heat a wok or a skillet over medium high heat. Add some oil and the onions. Cook for 1-2 minutes then add in the spam and brown.
    2. Once the spam has browned, add in the carrots, mushrooms, and zucchini. Add more oil as necessary. Season lightly with salt.
    3. Once the vegetables have cooked, add in the leftover rice and break it up. Create some room in the center, add some oil, and break two eggs into the wok and scramble.
    4. Add in the soy sauce, sesame oil, and sriracha. Season with salt and pepper to taste.
    5. Top with sesame seeds and green onions.
    Kimchi Fried Rice
    70g of diced onion
    60g diced carrots
    60g diced mushrooms
    60g diced zucchini
    7.5g minced garlic
    20g scallions

    100g kimchi
    20-30g soy sauce
    10g gochujang
    5g sesame oil
    1 egg
    2g sesame seeds
    400-600g leftover rice
    1. Heat a wok or a skillet over medium high heat. Add some oil and the onions. Cook for 1-2 minutes then add in the remaining vegetables. Season lightly with salt.
    2. Once the vegetables have cooked for a bit, make some room in the center, add more oil if needed and add the kimchi to caramelize.
    3. Add in the rice, soy sauce, sesame oil, and gochujang. Season with salt and pepper to taste.
    4. Fry an egg to place on top.
    5. Top with sesame seeds and green onions.

    Quick tip, when you add the soy sauce, add it around the edge of the wok so it sears for a quick second before touching the food. Adds a bit more depth

    I really like the thrown together feel of this. I love your other videos and have tried at least half of all the recipes you have uploaded to youtube, and made the Japanese Curry and Firecracker Brussle sprouts (sometimes with pulled pork shoulder) over and over and over again.     J-Kenji recommends that when you're using a walk to pour the soy sauce around the sides of the pan so he soy sauce cooks. Just food for thought any little hack to get the most flavor into meal prep.

    The trick I use with my fried rices is that rather than salt I use powdered bouillon (specifically i use the soup-in-a-mug stuff - it adds a meatiness whether you are using beef or chicken and also has MSG included for flavor depth)

    I’m a firm believer that vinegar brings a much needed touch of acidity to any fried rice. It keeps the whole thing from feeling too “dank”. Brightens it up a little.

    Honestly those knife prices aren't bad! Good knives typically cost an arm and a leg, so I was very (happily) surprised by the prices you gave. I have 2 MAC molybdenum steel knives from Japan, and I love them. I waited for them to go on sale before purchasing them, and it still cost me more than I care to admit

      A few years back I spent $200+ on a knife from a different very popular German brand and I hated it. Went to target, bought the Zwilling one in this video and it out performed the expensive one in literally every single way. Haven’t used the other knife since, I have no idea where it even is. RIP

    spam is so delicious. and if you use the turkey or the lite versions, it's really not the most terrible thing for you in terms of macros. i mean its not the best thing either, but we've all eaten worse.

    Just one Question
    You said for your baked oatmeals recipe, I can omit the protein powder but instead replace it with sugar and flour. How much sugar and flour? Also could I use honey or maple syrup instead of sugar?

      I’ve never tested with the flour and sugar so I’m not really sure. And instead of syrup I would use sugar instead. Honey has too much of a strong flavor for my preference

      I've made the baked oatmeals with flour and sugar (flour: same amount by volume as protein powder + half of that amount of sugar, also 2 scoops flour + 1 scoop sugar). But I HIGHLY recommend the protein powder, it is just much better, gives a better texture and flavour. You won't regret the investment!!!
