Regarding your comments on "graphics" for decades, up until around the late 90s, all anime were drawn on plastic sheets of film and shot with a camera, so there's not really much you can "improve", outside of the quality of the camera, if the master was stored in a high-definition format or not, and how nice the drawings are. But yeah, once you enter the digital age, you're able to make use of CG effects to add a LOT more detail than you could do prior.

Yes and no. Some animes (like Ulysses 31, the Mysterious cities of Gold for France or Reporter Blues for Italy. Or Ōban Star-Racers more recently) were co-creations. The concept and the design were made in Europe but the real animation was made in Japan. There's some cartoons made manly in Europe (Moi Renart for France, frex), although some parts were animated in South Korea, just like the Simpsons or the Spectacular Spiderman, but are often not called animes. The same way Arcane is made in France and isn't called an anime. It's a bit gate-keepish imo, because it's the same art.
As someone who had watched the first season of Attack on Titan when it came out and only watched the rest a few months ago, I'd highly recommend you go back to it until the end, it's one of those anime that's worth it. Especially if the first season managed to pick your interest, then you'll definitely like the rest I'm sure because it only gets better.

At 42 I fondly remember so many of them. Watched many of them in my childhood at german kids TV. Such a great time and always great to rewatch some of them on dvd/blu-ray. 🥰🥳 You definitely missed out something as many of those are not particularly targeted to child’s. Many of them are to a more mature audience or just layered to be received differently depending on the viewers age. Series like Neon Genesis Evangelion are hard too grasp and not something I would show someone younger than 12. and this applies to many anime series
