@Oliver_B Jazz III is not that thick, but I also find it really good for strumming. Also, try a 3.0mm stubby, I find it's overall better than the Jazz III, maybe not for strumming tho.

I used to favour the Jim Dunlop Jazz III but now it's any .46mm pick.

How do you that triple strum technique at 2:48?? I've been trying to find a slowed down video of this or what its called but i cant find it
He just doubles the strums between the next note. If you’re strumming 16th notes, the in between triplet should be 32nd notes.

I'd suggest practicing them while fully muting. You need to learn how to do it, before you start doing it in between notes.

You take any Fender and plug it in the oven, then you have that weak ploink sound.
at 1:43 do you actually press all the four strings (2nd and 3rd at fret 6, 4th at fret 5 and 5th at fret 6)? I find it tricky to pull off.
