I'm sitting here with a bottle of homemade fermented scorpion sauce next to me, having snacked on it most of the day. My pepper plant is behind me on the windowsill, and I can't wait to make my next batch next harvest!
Made the jalapeño pineapple hot sauce today! Really tasty, but I did have to make a few adjustment. Figured I'd share for those who are interested: The 2 cups of vinegar was A LOT and the sauce ended up tasting very vinegar forward, and also a bit watery. Ended up adding some more pineapple to thicken it up and add some sweetness back. Also used a few habaneros for added heat, used 1 tablespoon of lime just & 1 tablespoon of lemon juice, and blended a handful of cilantro in with it all. Loved the end result and highly recommend these slight alterations!
Nice I may try this alternate recipe. I figured 1 cup of vinegar would be better alongside the habaneros to replace the jalapeños. Did you really notice that much of a difference between using half lime half lemon instead of all lemon juice
I made the jalapeno one today. It's freakin incredible. Just be aware the ingredient amounts they give you is enough to fill 4 mason jars so maybe scale it back unless you have people to give some to. My only recommendation other than that would be to maybe scale back the lemon juice to 1 tbsp.

Hey peeps....a couple of tips on hot sauces 1. Try smoking your peppers and other ingredients like tomatoes that you would use in you sauce. I like Cherry wood and Apple Wood 2. Grill everything: tomatoes, garlic, onion slice in half, your peppers. If you make the same sauce, regular, grilled, and smoked...they will all taste different. 3. Things like fresh squeezed orange juice, lime juice, pineapple add sweetness. Just pick one though. 4. Honey....I only add it to my red sauces and combined with fresh orange juice...is awesome for wing sauce. 5. There are other liquids. When re-hydrating dried guajillo chiles (the red ones)with hot water... I'll use the resulting tea as the liquid base. If you use a broth...like vegetable broth....the sauce is only good for 4 to 5 days

2:00 I copy this exact same recipe, only in place of chopped jalapeno I use a can of chipotle peppers in adobo suace, and in place of the lemon juice I use fresh squeezed lime juice. I go a little lighter on the garlic as well. It's wonderful, and it makes a big batch. I bottle it up and pop it in the fridge and it last me for weeks.

See Joshua Weismann on Fermenting...he uses far less vinegar. I say only use as much to keep pH around 4.0

2:00 I copy this exact same recipe, only in place of chopped jalapeno I use a can of chipotle peppers in adobo suace, and in place of the lemon juice I use fresh squeezed lime juice. I go a little lighter on the garlic as well. It's wonderful, and it makes a big batch. I bottle it up and pop it in the fridge and it last me for weeks.
