I followed your advice in June and planted pink eyed purple hulled cow peas. This morning, 55 days later, I’m starting to harvest! I’m totally going to run a 2nd round of these. They might even completely replace my green beans, which are not producing much.
While I wouldn't recommend using cow peas to replace green beans, I would recommend that you try eating cow peas at the 3 distinct growth phases. The first growth phase is the green snap stage. They're quite delicious steamed or lightly boiled. At the shelling pea stage, you can saute or, again, lightly boil. The last phase is the dry pea stage. Allow the pods to thoroughly dry on the vine before harvesting. Shell the dried peas & store safely away from moisture. Save some peas from your best plants for next year's cow pea crop.
