KITCHARI - EASY, NON-BLOATING VEGAN MEAL! (DELICIOUS & HEALING)

  • Kitchari/Khichdi is a dish that is simple, cheap, delicious, healthy and incredibly easy on your digestion. Kitchari comes from Ayurvedic tradition that dates back thousands of years. If you are interested look into it more, it's a very ancient practice!
    I hope you enjoy this recipe. It is really good and I enjoy making it. Let me know your thoughts in the comments down below. Have you heard of Kitchari before? What spices are your favourite to add?
    RECIPE
    1 cup split mung beans
    1/2 cup white rice
    2 cups vegetable broth
    2 cups water
    3 carrots, chopped
    1/2 cup peas
    1/2 tsp cardoman
    1/2 tsp cumin seeds
    1/2 tsp cumin
    1/2 tsp ginger powder
    1/2 tsp coriander
    1/2 tsp turmeric
    Combine all ingredients except peas into a large pot. Mix together and bring to a boil. Once it is boiling, turn down to a simmer. Stirring occasionally, for approx 25 mins. When all the water is absorbed and everything is cooked through, remove from heat and add the peas. Cover for a few minutes and serve warm, alone or as a side dish.
    This is a great meal to meal prep, and can be made it large batches and frozen!
    Please note: traditionally, the spices are heated in oil before adding to the bean/rice mix. I did not include this step because I find adding the spices to the pot and cooking them works just as well, but if you want to heat your spices up in oil, feel free!

    Try adding a squeeze of lemon before serving. Adds flavour and further helps digest the protein from mung beans

    It's an Indian dish(i am Indian btw😁). Absolutely a beast of a dish for our stomach(saying in a good way) and nutrition content as well💯.

I'm not sure if you're mad cuz he did use it but he didn't. Or you're mad because you think he did but he didn't. Either way he didn't he just mentioned it was traditional. Wow

    Yay, I love kitchari 💛 it's so versatile and there are endless possibilities as far as spice and veggie combinations. For anyone looking to make some kitchari, couple tips: usually kitchari doesn't include allium plants like onion or garlic because they can make gas/indigestion worse. That was tough for me because I love alliums. But that's how I learned about the ancient indian spice Asafoetida, or "hing" powder. When cooked, it creates an onion/celery flavor and also has been shown to decrease bloating and gas, so perfect if you're feeling a bit gassy. Some other alterations I make: I toast the spice seeds (usually cumin, mustard, fenugreek, and fennel seeds) in a bit of coconut oil, then once the seeds start popping, I add all the ground spices, then the veggies, broth, mung beans, and rice. Last time I made this, I used potato and zucchini for the veggies and topped with some cilantro and lemon juice🥔🥥🍋💛🥰

      Thanks for sharing the tip about allium. I have just made my first. Kitchari and i did not have all the spices available but i used one garlic just for the habbit of it, but intuitive i added a little of lemon juice on it. Looking forward to eat it.

    Khichari is a traditional food in India made in pretty much every home as a comfort food whether any one is sick at home or came back from a long vacation and want to feel as light as possible from all that junk you ate, or if you can't think of anything to cook Khichari is the answer. There are other lentils you can add in there for more protien or nutrients, upto your taste but I love it and always remind me home. We eat it with KHADHI or Chash(made of yogurt), it completes the dish!!

      j mc. Any suggestions for a vegan yogurt? I love almost all the ones I've tried but I am only familiar with flavored/sweetened versions. I am assuming that a plain one would be best with a savory dish.

    I made kitchari for my youngest daughter after she moved back it she is not vegan and she LOVES it but likes to call it poop soup cause she says it makes things move along.

    I love rice! I had had chronic candida, hypothyroidism, parasites and had to cut out sugar,dairy, gluten and white starchy foods but brown rice and buckwheat pasta is good for me so i'm happy. I will be eating more plant-based and cut down meat to 1-2 times a week. So i keep learning about these great dishes thank you.

    Hi Derek, great recipe!
    Historically khichdi was fed to sick people, since their system is too weak to eat more complex foods.I have a couple pointers straight from the khichdi recipe I've been eating for the part 30+ years.
    - Add asafoetida, it's good for digestion and aides with upset stomach.
    - I think you mentioned this in your video that traditionally khichdi is cooked in ghee. If cooking in ghee - you can flash fry cumin, asafoetida, and turmeric with one whole dried red chili for more flavor and aroma.
    P.S. - Thank you for the amazing videos, I've been vegetarian all my life, but your videos played a key role in putting me on the right path to eat clean and healthier vegetarian meals.

    Wow, never thought I'd see you do a kichari recipe. I spent some years in and out of Hare Krishna asramas, and they prepare this every morning. While living in India, an Ayurvedic doctor told me to eat more meals of kichari to soothe my IBS symptoms. Now I eat it multiple times a week for lunch and/or dinner. It's amazing how well it works!...probably the easiest meal for me to digest.

    I will be making this! Your digestion video has helped me so much. I was in the habit of eating big bites, barely chewing and expecting my stomach to do the rest of the work! It's a hard habit to break but at least now I'm aware of of it and how absurd it is to think that I wouldn't have gas and bloating!!!     Your digestion video helped me so much. I was basically swallowing my food whole because I was always eating while working or while doing school work or 5 mins before I had to be at my other job... Ridicilous... I've made sure I take the time to chew properly and eat slowly since seeing that video and it took about 3 days to start working well but now I have had my gas reduced by half... This is not a joke, my gf threatened to dump me because she couldn't sleep my gas was so bad. THANK YOU from us both! Love you guys!

    Used to eat it when I was a kid. My mom used to make it every 2 weeks or so. The best was vigarelli kitchli which is the left over kitchli which my mom roasted over again with spices. Haven’t had it since and I need to learn to cook it myself. Thanks for the video. 👍

    So glad you have an oil free version. I usually make this when the seasons change and wanted to make it in time for the Winter Solstice on 12/21/20. I eat it for breakfast, lunch, dinner for 3 days to detox my body. Trying to transition to no oil for 2021. Thanks! 😃

    You are so sweet and I love your channel. I love you said I cant take credit for 5000 year old recepie. I love honest channels. We make khitchri too...but I love trying new versions so trying yours now. I am making it in instapot though... So lazy.     aha finally i suggested you khichdi almost one year ago...unfortuntlly u dont notice..btw this very nutrient very healthy option and my favrt.. there are a lot of variation.. love from INDIA

    This recipe rocks! I've made it several times with varying veggies and even used mashed potatoes instead of rice - delicious! My great-nephew loves it too and describes it as only a six-year old boy could. "It kind of looks like poop and maybe even smells a little bit (broccoli in that one), but it is deelicious!"

    I am from India and it's pronounced as Khichadi here ...I eat this every Sunday and it's the best vegan food which tastes great and takes 10 mins to make
    &
