    My thoughts are:
    1) Keep everything clean by rinsing and wiping.
    2) Extract fast and slightly coarse rather than slow and slightly fine (an OCD detail, but great if you get it right).
    3) Avoid overly dark roasts as they will have nasty carcinogenic chemicals and be oily, clogging up your grinder.
    4) Avoid overly light roasts as they will tend to under extract and have weird subtle flavors in them.
Do this if you like to be goth and give your friends coffees they hate.
    5) Preheat, pre-infuse, and keep everything clean by rinsing, flushing and wiping. Puck prep is critical.
    6) Take meds to deal with your OCD.
    7) Buy beans from a coffee shop whose coffee you like and learn how to make what they do.

Great advice. I recently went from lighter roasted coffees to dark roast. I had to change the ratio, grind size, and temperature significantly to extract it properly.

Really excellent advice. Tiny nuggets of info, like darker roasts should be ground more coarsely, are very helpful!

Could you guys make a video on the differences/nuances between the different types and origins of beans??? Thanks again for the insightful videos!

The biggest reason is your coffee. Is it fresh? Roasted in the last fortnight?
Always look for a roast date on the bag. I was working in Mayfair, London with coffee that costs £1 per shot at cost/wholesale price and it was OLD. Most likely at least a couple of months old. It's extraction time was suggested as 30 seconds but was optimum at 20 for some sweetness because all the moisture was virtually gone.

I always getting new exciting tips from every video being released. One critical point noted is, the longer extraction, the more bitter and astringent taste will be expected. Thank you !

What about ph of the water? Also your own ph level and what you just ate has an impact on the perception of bitterness. For example, coffee tastes totally different after drinking orange juice, water, wine, or milk…

Great point! Your water can absolutely affect how your coffee tastes. We'd recommend diving in here: clivecoffee.com/blogs/learn/the-science-of-water-composition-in-espresso
