The Best Ube Macapuno Cake

  • This is it! It’s the (Red Ribbon-inspired) Ube Macapuno cake my friends and family have all been raving about! It’s a bit tedious to make but I promise the taste is all worth it once you finish making it!
    INGREDIENTS:
    3/4 cup sugar (for flour mixture)
    2-1/4 cups cake flour
    3 tsp baking powder
    1 tsp salt
    7 extra large eggs, room temp, separated
    1/2 cup canola or veg oil
    1 tsp violet gel or powder food colour
    1 tsp ube flavour
    100g grated ube, steamed
    2/3 cup full cream milk
    1/2 tsp cream of tartar
    3/4 cup sugar (for the meringue)
    **** I used two 8” round pans but I only frosted one cake in this video.
    **** Bake for 40 mins at 170deg C (fan-forced) preheated oven.

    What a great cake! I’ve been looking for a recipe all over YT and this is it! Are there other types of ube cakes? I’ve seen ube pound cakes but not sure which one is the original or more authentic. Thanks!

      Hi, you can start slow at speed 2 then gradually increase to med speed until you reach the stiff peak stage

    Hello. If I use ube halaya instead of grated ube steamed, how much sugar (for the cake base and for the meringue) should I use? Thanks so much!

      Hi, I haven’t used halaya with this cake kaya di ko masabi how much sugar you’ll put in. I would try omitting the sugar in the cake and just keep the usual amount of sugar in the meringue. But you have to do a trial-and-error here as I have not tried it myself 😄🤞🏻.

    Thank you but i have a question so for the frosring no flavoring of ube or yung crumbs on the side will add flavor for it? Or pede ba lagyan ng ube extract? Thanks

      Hello po, you may put ube flavouring on the frosting but bec of the cake crumbs on the side, hindi na rin makikita yung kulay ng frosting. I also like the contrast of the cream frosting with the ube cake crumbs outside the cake. So it really depends on your preference. 😁☺️

    What can I use to substitute grated ube and ube powder? Can i add to the qmount of ube extract instead?

      @@miasclassicandcustomcakes hi! I just finished baking my cake and i am waiting for them to cool down. I have read in a post (i forgot already where) to substitute the grated ube to equal parts of AP flour. I just added half a tbsp of ube extract and it turned out great! I qm making this for my mom's birthday tomorrow as a surprise! She loves ube macapuno cake and I hope she likes this one!
      P.S. I have asked everywhere and ube is just not in season right now

    Hello po, ok lang po ba gamitin ang all purpose flour instead of cake flour? If so, d po ba magbabago texture? SalamAt po sa pag sagot God bless always!

      Hi, thank you for your comment. You can actually use plain flour or all-purpose flour. Soft pa rin sya pero mas magsisink yung gitna ng cake at mas madaling madurog. Kung wala kang cake flour, you can substitute by mixing plain flour and cornflour (or cornstarch) together. In a measuring cup, put 2 tablespoons cornflour/cornstarch then fill with all-purpose flour up to the 1 cup mark. Do it several times if you want to make more cake flour enough to make a cake. Sift the whole flour mixture bago ka magstart magmeasure before baking. Hth. Take care 🥰

    Hi po hindi po ba nagkakaroon ng discoloration ung top after malagyan ng macapuno, meron na kasi akong na encounter na ganon ube macapuno pero nag kulay green ung ibabaw idk kung bakit.

      Hi, yes nangyari din sakin yan isang beses nung kinulayan ko yung frosting ko ng violet food colour. Kaya I never colour my whipped cream/cream cheese frosting. White lang sya then yung ube cake crumbs.

    Mas lasang ube ba sya sa cake ang plain grated steamed ube kesa gagawin mo syang halaya with all the milk and coconut cream?

      I’m not sure po kasi di ko pa sya natry with halaya. Matamis na po kasi yung halaya kaya masyado pong tatamis yung cake. You can probably use halaya but you have to lessen the sugar in the recipe. You can also put halaya as filling if you prefer.

      I haven’t tried it. I guess you can but you have to lessen the sugar in the recipe as the ube halaya is already very sweet.

      Yes, para hindi malusaw or magtubig yung cream, lalo na kung mainit ang panahon. Pero kung malamig sa loob ng bahay pwede na hindi iref. Pero kung malamig naman na yung cake, pwede mo na ipahid direcho yung frosting.

      Hi, thanks for your comment! Yes yung Lighthouse na plain flour. Alternatively, I make my own cake flour substitute using plain flour and corn flour. Walang difference sa texture ng cake.

      Bake for 30mins then do a skewer test. If cake is still wet, bake for another 5mins.

      @@iammylenef Siguro check your cake first if the top is still soft. If it still wobbles the don’t test yet, malamang di pa luto. Wait a few minutes more. I have not baked this on a 7” pan so I am just going by what I would probably do.

      Hi, yes pwede, but use 4 eggs. Bake at 170C for about 30mins or when you insert a stick in the middle of the cake and it comes out clean. Pag wet pa, bake for about 8-10mins more. Hth. Let me know how you go ☺️

      Hi, it would be around 3 to 4 inches if you bake it in two 9” pans. Taller if you bake it in two 8” pans

      Hi, I used two 8” round pans in this video but I only decorated one. Medyo puno bawat pan. You can also bake this in two 9” pans or one 10” round or square pan. Pareho lang ang baking time.

      Hi, thanks for asking! Pwede namang hindi, basta it is cool enough to apply the icing. Pero mas firm kasi yung cake kapag malamig na. Mas madali pati syang ihandle kasi hindi masyado malambot lalo na kung hahatiin mo sya into layers.
