UBE MACAPUNO CAKE | using ube powder | taglish w/english sub | (034)

  • no ube or ube jam? no problem. use ube powder. 😊
    **chiffon cake recipe adapted from nora daza
    UBE CHIFFON CAKE (i used three 7"x3" pan)
    2 1/4 c cake flour
    1 c sugar
    3 tsp baking powder
    1 tsp salt
    1/2 c oil (canola, corn or vegetable)
    2 tsp ube extract (i used bakersfield ube flavocol)
    6 pcs large egg yolk
    3/4 c water
    3 tbsp ube powder (i used pureblends ube powder)
    1 c large egg whites (6 - 7 pcs)
    1/2 tsp cream of tartar
    1/2 c sugar
    SMBC
    1 c sugar
    4 large egg whites
    1 1/2 c butter
    1 tsp vanilla
    ______________
    half recipe
    1 1/8 c cake flour (1c + 2 tbsp)
    1/2 c sugar
    1 1/2 tsp baking powder
    1/2 tsp salt
    1/4 c oil (canola, corn or vegetable)
    1 tsp ube extract (i used bakersfield ube flavocol)
    3 pcs egg yolk
    3/8 c water (6 tbsp)
    1 1/2 tbsp ube powder (i used pureblends ube powder)
    1/2 c egg whites (3 pcs)
    1/4 tsp cream of tartar
    1/4 c sugar
    SMBC
    1/2 c sugar
    2 large egg whites
    3/4 c butter
    1/2 tsp vanilla
    ______________
    guys, i honestly can't remember if i used 6:1 or 2.5:1 ratio for the drips. 😅 anyway, both ratio can work for drip cakes. just wait until it reached your desired consistency. whisk it or just let it rest first. ❤

    Thank you for this recipe mam. First time ko po mag bake and I used this po. I'm glad na okay ang kinalabasan nya, hnd lang tlaga ako marunong pa mag design. I love the taste po Tama lang ang tamis nya sabi ng aking mga taga tikim hehe. Btw I used 8"x4" pan kaya 1hr ang baking time ko. God bless po!

    Hi po! I've tried your recipe at successful sya. Sarap! Thank you for sharing! 💜
    Question lang po, okay lang po ba iref ang chiffon? I used Canola oil.
    Kasi magbake po sana ako ng ube chiffon with leche flan filling. Sa Nov. 21 po yung occasion pero 19 ko sya ibe-bake and frosting (whipped cream) kasi aalis ako sa 20.
    Okay pa po ba sya sa ref hanggang 21?

      i always use magnolia gold unsalted and bakers best margarine. im not sure though if it the best butter. just my personal preference.😊

      di ko pa po na try un smbc with whippit po. pero bagay din naman ang whipped cream na lang instead of buttercream sa ube cake. ☺️ or better use italian meringue buttercream (IMBC) na lang para mas stable po.

    Hi Miss Jhoanienie, as always po, palagi po perfect ang gawa ko after watching your tutorials. Sa iba kasi, pumapalpak po gawa ko. Ginawa ko po itong ube chiffon with swiss meringue buttercream at yong chiffon mango cake sa birthday ng husband ko. Marami pong nagtatanong kun magkano ang price ko sa ube cake at sa mango cake. Medyo nahihirapan po ako sa pagcosting. 🙂

      tuloy tuloy lang po hanggang lumamig. di naman po ma overbeat. pede din naman po na ilagay sya sa fridge pag nag stiff peak na sya. wait till lumamig bago i add si butter. para maka rest din si mixer. pero ako po, tuloy tuloy na.

      di ko pa po na try mag ube halaya sa recipe na to eh. pero may ube chiffon po ako na, na share na using ube halaya. un ube custard cake po. tanggal na lang un custard part.😊

      pede po kung ano ang gusto nyo gamitin. halos same lang po sila. pede sila pagpalitin. mas stable lang po ang imbc. if chilled naman cakes mo po, ok lang kahit si smbc.😊

      pede i store sa ref ang smbc ms.elvie, though ako, mas prefer ko kasi na di mag store kasi i r rewhip mo din po kasi sya. tapos sa experience ko mas better quality pag bagong gawa po.

      yes po. 😊 gift lang kasi sya sa kin kaya im not sure po san sya galing. pero may nakita ko sa shopee, the same sila pero un sa kin is plate lang tlaga. ill try to ask my friend din po if san nya na buy. ill update u po pag nasabi nya na.😊

    Hi Ate, nag try po kami ng recipe na to, ang sarap. promise! May question lang po ako, pano gawing Ube Moist ang base nito? Yung walang meringue po sana and parang dun sa chocolate cake na tutorial nyo ang procedure? May natry kasi kaming ibang recipe ng ube moist daw kuno pero it turned out na parang puto yung cake. And by the way, itatanong ko na rin po kung anong brand yung gamit mo pong butter na mura lang? Na mention mo dati sa isa mong vlog yung brand na nabibili sa mga supermarkets yung parang combination ng margarine and butter ba yun? ang mahal po kasi ng Magnolia butter.

      sir chris, wala pa akong recipe ng ube cake na mas dense po eh. want ko din sya aralin. pag meron na i share ko po.😊 un butter, lagi akong baker's best margarine po. if sensitive panlasa may parang after taste sya pero for me is ok lang. kasundo ko sya kahit sa mga baked goodies ko po. tapos ayun nga, magnolia unsalted ako if want ko ng taste better. pero un baker's best un go to "butter" ko po.😊 wala naman bad na feedback so far.😊

    Hi. I made this today and my chiffon cake unfortunately collapsed. It was not level like yours. It looks like one big crater. I followed your recipe exactly. I did NOT use nonstick pan. I baked at 300 degrees F for 35 minutes. Toothpick came out clean. The cake in the pan cooled on the wire rack upside down. I would appreciate if you could help me figure out what went wrong. Thank you!

    Hello po,. Ask lng ako, yung ube extract n gamit nyo May flavor po ba? Meron ako ube essence, pero for color lng po xa, mapait. Walang flavor. Ok lng po ba yun?

      if mapait po parang di ko para i suggest na ok po. ube flavorade / flavocol po gamit ko. flavoring plus coloring sya.

      smbc and imbc, naka bakers best (margarine) lang po ako madalas. if pang mga filling, minsan naka magnolia gold unsalted po. either lang sa kanilang dalawa (as of today). ☺️

      haven't tried using ube halaya with this recipe po. but i have another ube chiffon with ube halaya. ube custard cake po. less the custard na lang if you only need the chiffon po.😊

      2 1/4 c cake flour =
      (2 c - 1/2 tablespoon all purpose flour) + (1/4 c + 1/2 tablespoon cornstarch)
      sift 3 to 5 times.😊

      i always use baker's best (margarine) po if i need butter. cheaper kasi and nakasundo sya. pero ayoko sya if as is ko lang kakainin. if i want naman na taste better, magnolia unsalted po. 😊

      un buttercream ideally dapat sana nasa chiller po pero kaya naman nya mag stay sa room temp din. depende sa klase ng buttercream po. mas stable ang imbc and un may halong shortening po.
      ang water ganache, pede sya sa room temp for days po. no need i chill.😊

    Hi! What’s the purpose of ube powder po ba? Is it just for coloring? I did your recipe exactky but the mixture without the egg whites were very thick. The ube powder I used was the Giron Ube powder, i think its the dehydrated ube. I added na lang water 1/4 cup but the batter was still not as smooth as yours. I hope I do not have to re do it without the ube powder.

      hi. sorry for late reply. flavoring din ang ube powder. instead of ube halaya, sya ung ginagamit po. im not familiar kasi sa giron ube powder. i used pureblends kasi all the time. kaya di ako sure if dahil don. sure po kaya na walang na skip na liquid ingredients? if wala, baka dahil sa ube po. hindi ko honestly sigurado why. now ko lang na encounter un ganong case po kasi. konti lang naman un flour nya enough sa liquid ingredients naman.
