      @LTRAN: This sort of comment is made on nearly every taste-test video they do. The answer is that they post full ratings of everything they tested on their website. For the videos, they usually just discuss the top choice, bottom choice, and something in between.

    Correct again!!! The whole milk Polly-0 is delicious and melts beautifully. It may cost a bit more but you get what you pay for!!! Well done 👍🏻 without your video I may not have ever purchased it as I thought whole milk mozzarellas was all the same with the exception of salt levels. I was wrong!!!! Thank you so much 😊

    Hard to find block mozzarella in UK, you can only buy it pre-grated. Most mozzarella here is the ball in the brine which is also good on pizza just sliced into disks, has a much more mild flavour.

    I am a home pizza baker and can tell you who has the best! Polly-o is pretty good, but even better...the best mozzarella cheese is ....Trader Joes whole mill, low moisture cheese! It's amazing! (Maybe it is from Polly-O?)

    From what I recall, Polly-O is semi-regional. I feel like with all of the brands of Mozzarella out there, you guys kind of narrowed it down to only 2, which is really unfortunate considering some of them aren't all that wide-spread.

      You sound like that amateur "chef" on the tube who makes "authentic" NY pizza. Find a deli that will sell or special order Grande mozzarella. Not cheap but amazing.

    If you have a friend in the business, have them order some Grande Mozz from their wholesaler. Not cheap, but you won't eat super mozz cheese again.

Our current "two party" system is a sham, and both sides have been controlled by the deep state and C_A for decades, which means we, the people, have been lied to for decades.     I have to look for the Polly-O brand of cheese to make my pizzas with, but most of the ones I cook are already made up and just need additions added and cooked.

    Both Frank Pepe's and John's of Bleecker use Polly-O Whole Molk Low Moisture Mozzarella.
    But I notice home pizzamakers tend to like drier mozzarella. Though coal oven pizzerias, like Pepe's and John's, have the advantage of a higher heat oven that helps burn excess moisture off wetter mozzarellas.

    Polly-O, of course it's the best! The only mozzarella my grandmothers, mother, and I would use. It's the best and does taste better than any of the others.

    Here in Montreal Saputo is king by a long shot. Tre Stella Parmesan and similar is very good for the price.

    I buy blocks of mozzarella and then I vacuum pack them even though they’re already vacuum packed and I age them. I find that it takes a rather bland cheese and turns it into something that is quite remarkable. No hi tech she’s closet I have a cool place in my basement and a stack of my mozzarella there. Try it even 4 to 6 months makes it an amazing cheese

    I’m wondering if your expert panel was simply older than your studio audience. When I grew up in the ‘70s, Polly-O whole milk mozzarella was what mozzarella was. Even on the Upper Eastside, fresh mozzarella still wasn’t a thing, and Organic Valley simply didn’t exist.

    You have to get whole milk mozzarella. There’s no point in getting low fat cheese. I can’t tell much difference between any whole milk mozzarella anyway, especially when it’s on pizza or in lasagna. That’s why I’ll just buy the least expensive one

    I tried Polly-O before and I personally didn't like it. I found it to not have much flavor and was watery. Either way, love these review videos.

    I use a blend of cheeses for my homemade pizza, usually it is monterey jack, mozzarella, provolone, and parmesan. Mozzarella on it's on is very bland...

      I do too, ever tried parmesan reggiano and gruyere? I made a king Arthur recipe. Its called crispy cheesy pan pizza, it's really good.

      Actually, taste tests have show that cow's milk mozz is more flavorful than buffalo. Buffalo is just authentic to italy and naples style pizza. Doesn't mean it's better

    Try a taste test for *Feta* cheese. I couldn't find anything I would call Feta on my last visit. Disgusting stuff not even in brine. 😝I've learned to make my own Feta.

    Remember too that most pre-shredded cheese has anti caking agents in them. For some reason for me it changes it to an extent. I will gladly shred my own for a dish or to eat straight. I can get pre-shredded cheese without the anti caking agent at my local cheese factory(I live in Northeast Wisconsin). So I will do that if I'm feeling lazy.

    I live in Wisconsin, the largest cheese producing state, and I’ve never seen any of these brands here. I don’t know what the answer is, but this review, like an ice cream review I recently watched here, are irrelevant to those of us who don’t live on the East coast. I suppose getting ice cream to you from other regions would be very difficult. Cheese? Not so much. Even when I lived in Louisiana for a few years, major cheese brands from Wisconsin were widely available in stores. Same with sausage and deli meat brands, such as Johnsonville. Boar’s Head? Pretty sure no one in the Deep South has heard of it. Here you can find it if you look, but it’s overpriced compared with brands made here.

    You haven't had mozzarella until you've had Italian-style buffalo mozzarella (especially mozzarella di bufala Campana). The dry, semi-soft stuff you find in the U.S. is nothing like the amazing Italian cheese, with a semi-soft outer layer and creamy interior.

      This is *America's Test Kitchen* for a reason.
      There are no national store brands, outside of Walmart and the like.
      And they're not winning anything. ATK does national brands whenever possible. That way anyone, anywhere in the country can buy them.
      The only exception I've seen is a bread testing, where there were literally no brands sold nationwide. So they had an East and West winner.

      Those are not fresh mozzarella samples in this show. Totally different usage. Fresh mozz is available in most places in the U.S.
