What’s up guys! Garma garam vada pav with rains and a hot cutting masala chai. Nothing can beat this combination. Here’s my vada pav recipe for you guys, enjoy the rains with this recipe. I would love to see your vada pav versions & celebrate this monsoon season with you all! Stay safe! Cheers! For the besan chutney : 1 cup besan Salt to taste 1/4 tsp turmeric (you can leave this out too if you don’t want a bright yellow color) 2 cups water Mix besan with water & make sure there are no lumps Oil 1 tsp Green chilli + garlic + ginger paste 1 tbsp Cook for a minute on medium flame. Lower the flame & add the besan mixture. Mix continuously with a spoon or better with a whisk until the mixture starts to turn thick. Cook until the rawness of the besan has gone & the mixture is slightly thick. If the mixture gets really thick then add some water and cook for sometime. The mixture will thicken further as it cools down. What I do is, once the mixture cools down a little bit, I add a little water and whisk it well to adjust the consistency before serving. Adjust salt, you can add a tadka of rai, jeera of you want, usually I do not do that. Serve it with some Thecha on top (to prepare the thecha, take 5-6green chillies, 7-8 cloves of garlic & a large pinch of salt and grind it together)
I think you should prepare a barbeque in you studio on that you can really make some awesome dishes of chicken or paneer Just a suggestion by the way like your video.

I was gonna type exactly this until i found this comment! But I am sure some vendors add coconut. Dessicated coconut has a different texture when you bite into it. I am sure I tasted that in most of the vada pavs in mumbai. The besan chura is usually the leftovers that float when the vadas are being deep fried. They don't intentionally make the chura as far as i have seen.

In the besan mixture, you can also add in some turmeric and red chilly powder. And for the vada, you can mash the potatoes first then add in the paste and mix everything together add salt and coriander so u can quickly start making the vada's and now wait for it to cool down and try not to over mash the potatoes, a few chunks should be in there to make it taste nice or a mushy vada won't taste the best.

For the besan chutney :
1 cup besan
Salt to taste

My mom taught me a trick.. Add some hot oil in your batter! It makes the batter even lighter and thinner

In the besan mixture, you can also add in some turmeric and red chilly powder. And for the vada, you can mash the potatoes first then add in the paste and mix everything together add salt and coriander so u can quickly start making the vada's and now wait for it to cool down and try not to over mash the potatoes, a few chunks should be in there to make it taste nice or a mushy vada won't taste the best.
