Chocolate should not be overcooked. Water should not be mixed as it will be hard and only cream or milk can add in ganache. Heat the first cream and then add the chocolate and mix well until it becomes smooth.
Always put gas on low flame to medium and fresh cream should be at room temperature while mixing. Do not over cook. Follow the video to get good results.

I followed the recipe but the oil split. I added water to regain consistency. But upon cooling down it became hard again. What to do to avoid this

Tried this but when i added cream it got split and came in to a thick consistency. And oil got split.
