Yeah, that digital dipstick is a bit of a pain. Now, I think you should do a compilation or rating of your vehicles. Least difficult/most straight forward oil change to the most difficult.
The drain blot and pan are aluminum. You shouldn't over tighten them, or one/both will give out. I personally wouldn't want to flip that coin. Also, it's a flat 6; you're supposed to let the oil completely stop dripping into a graduated container and then put in that exact amount of oil. If you overfill, you'll have issues with the engine.

I’ve only heard 37-ft-lbs (~50-Nm) for the drain plug. Is that torque spec specific to that drain plug?

You over torqued the oil plug. Use a torque wrench the next time. You risk spinning the threads out of that pan.
