similar, just warm the pan up first like you would on gas but the cooking times will be similar. The bigger difference is when you turn down the heat, gas, like induction will respond quicker when you turn it down so best to start at say a 7 to get things going, the drop it to about a 5 for part way through the cooking and depending on what you are cooking, you can then drop it further if needed to reduce the chance of burning.

There is never an appropriate time or place to double-dip.
A lot of the artichoke gets wasted just for a small ‘heart’. Doesn’t make sense to me.
You also eat the ends of the leaves. And you can cut the centers out of the stems and eat those too because they’re very soft!
