  • A few weeks ago I made an Asian pork tenderloin and used my homemade ginger paste in that recipe. An overwhelming number of you requested that I share how I make my homemade paste so today we are going to do that!
    Homemade ginger paste is pretty simple, and I love that it is seriously only three ingredients. ginger, water and a bit of citric acid. That is it! I use this in my morning vinegar cocktail that I drink for my health and I also use ground turmeric as well. A wonderful way to get your body going every morning!
    When selecting ginger, you want to get fists that look fresh and not shriveled, it should be heavy for it's size and it should spritz when your gently dig your fingernail into one end. You can purchase as much or as little as you like and make it in amounts you think you will use within a few months. I made what equaled two cups of ginger, half I used to make ginger turmeric paste, the rest will keep in my fridge for a significantly long time.
    I got my ginger at the commissary but also love to get mine at the Asian market up the street from me. They always have amazing organic, super fresh ginger root that is super cheap. So if you have an Asian or an East Indian market near you, check there first because they go through it fast and it will always be at the peak of freshness.
    I started out by peeling the ginger. I do this by using a spoon and scraping the skin off of the ginger. Then I cut the ginger up into julianne size strips. You don't have to be super precise when cutting up the ginger, just get it smaller.
    I put the ginger in my mini chopper with a couple tablespoons of water and wazzed that up till it was a paste. I kept adding ginger till all my ginger was mixed into a paste. I also added more water with each addition to keep the viscosity up. Then I added some citric acid. You will want to add 1 teaspoon per cup of processed ginger to help keep the mixture from oxidizing and to keep it really fresh in your fridge.
    I like to store my ginger in a mason jar with a tight fitting lid and preferably a new flat lid. This will ensure extra prolonged freshness. Just keep it in the fridge and pull it out and use it as you would prepared garlic for all your Asian dishes. Fresh ginger is also great added to your homemade pumpkin and apple pies. It will give it a really nice intense ginger flavor.
    You can use the fresh ginger as I do in a vinegar cocktail or as a great and natural way to alleviate heartburn or stomach upset. You can use it to make ginger tea to help stave off nausea as well. Ginger is amazing and everyone should have it on hand. It is a natural medicine as well as an amazing flavorizer!

    Ginger is so good for you, which is why my taste buds don't like it. I'm blown away that people eat that much of the stuff. Kudos to all of you who do. I only like it in cookies and cake.

      You can also get ginger in a capsule form so you can just take it like a supplement and you don't have to taste it.

    This is great, I saw it the other day at a specialty store in a squeeze bottle. That seemed like a good idea, but was pricey.

      Sarah Mutonga because lemons are not consistent in their acid. Citric acid is. From a food safety perspective using thr citric acid is much safer.

      No you need to use the citric acid. Ramon juice is not going to preserve this as well as the citric acid.

      You can peel and cut up the ginger before it goes off and put in small zip lock bag or plastic container and stick in the freezer!
      The ginger paste you can put in an ice cube tray and place in freezer and use each cube at a time.

      I read the info section and was unable to find where it stated the length of time the ginger paste could be stored safely in the refrigerator.

      Becky Skinner my apologies. I have never had it go bad. But for safety sake I would say you should only make what you will use within three months.

      Citric acid does add sourness. That is what makes sour gummy candies sour. It may be that you added too much. I do not find that it causes a sour taste in the food when I use it.

      No, you cannot can this. There is no safety tested recipe for canning this. Additionally, heating the ginger to that high of a temperature will be killing the magic contained in the ginger. The ginger is a healing root. Consuming it for your health is why I do this. Not just for flavoring dishes. I drink this ginger daily mixed with turmeric paste. Heating this will kill all of that benefit. You should not can this. You won't probably find a safety tested recipe for it anyway. You should not can things without a safety tested recipe.

      Nooren , for the utmost health tip, grate a little bit of garlic into your ginger and turneric drink. Many Indian ( East Indian) people do this .

      There really isn't one. This needs to be processed using a processor.

      It wont work as well because the ginger is very fibrous and my burn out your blender motor

    I dont like the idea of citric acid being used, as it's not very good for you. What can I use instesd ? Salt? Does the jar have to be sterilised?

      Citric acid is not good for you? It's vitamin C for heaven's sake. The citric acid I use is GMO free and organic. How can that be bad for you? Salt is not a substitute for citric acid. You should wash the jar, but you don't need to sterilize it. You will need to keep this in the refrigerator.

    I always do like this for years but never use citric acid. What I do, after making paste, just place them in ice cube, freeze these & use ziplock for frozen ginger paste cubes…
    However, I am interested knowing the name of your food processor. Sounds like it is very powerful one!

    What would you use Ginger Paste for ? We use fresh Ginger for Asian dishes mostly. Also in hot tea for winter time colds.

      Yes, you can freeze chicken soup, however I don't recommend freezing it with the noodles in it. I always make and serve my noodles separately because then when you have leftovers you can just freeze the soup in an airtight container. I like 2 quart ziplock containers. They are rectangular, deep and stack nicely. When I want to have soup for dinner I just take it out of the freezer, run hot water over it, pop it out into a pot and add a little hot water to the bottom then simmer till ready. While that is cooking I can make the pasta of my choice. I just did that the other night in fact, with my Italian chicken soup. I make great batches of it in my pressure cooker and have enough for five meals. I made it with macaroni and added the dry mac right to the simmering soup. Delicious.

      No cream of tartar is not an appropriate substitute for citric acid.

      No, that won't work and You will most likely ruin your coffee grinder. That was not designed for wet applications.

      It's always good when you eat it in it's most raw state but expect a very strong soury bittery taste.

      Abi no. You should use a crushed vitamin C tablet otherwise known as Ascorbic acid

      Thank you for replying. I found citric acid but when I put it in as you showed me the ground ginger turned orange. Do you know why? I got the citric acid from a health food store. Is the ginger safe to use?

      Unfortunatley no. Lemon juice and citric acid are two very different things and the lemon juice does not have the staying power of the citric acid. You can also use a crushed vitamin C cap or a spoonful of ascorbic acid. All three are readily available in a drug store or big box store.

    Thanks it's so easy I can't believe I'm going to be able to do it. I'm going to have to go buy citric acid, I don't even know where in the store to look for it but I will find it. And / somebody else's suggestion I'm going to freeze it in Tiny ice cube trays so I will always have it when I need it.
