    **EASY SEITAN RECIPE**
    ▻Servings: 10
    ▻Macros per serving: 35g P/6g C/2g F
    ▻ngredients:
    300g Vital Wheat Gluten
    125g Premium Pea Protein (Unflavored)
    40g Nutritional Yeast
    1 TBSP + 1 tsp All-Purpose Seasoning (make sure it has salt)
    10 ounces of water (add more if needed)
    1 TBSP Coconut aminos
    ▻Instructions:
    ① Preheat oven to 350°F, line a baking dish with parchment paper, and lightly spray it with non-stick spray.
    ② Measure the dry ingredients with a kitchen scale and add them to a large mixing bowl. Mix.
    ③ In a small mixing bowl, combine the wet ingredients and slowly add to the dry mix. Mix until reaching a bread dough consistency. (3-5 minutes)
    ④ Knead the mixture with your hands and roll 4 logs. Place them on the baking dish.
    ⑤ Cover the baking dish and bake for 20 minutes. After 20 minutes, remove the cover, flip, and bake for an additional 15-20 minutes.
    ⑥ Once Seitan is cooked, let it completely cool before slicing (1hr+). Slice in a food processor or use a mandoline slicer.
    Use for wraps, meal preps, burritos, sandwiches, or eat it by the handful. Enjoy!

    I just made the recipe
    I added loads of pepper , and a heaping tablespoon of Italian herbs , 1 tablespoon of onion powder
    1/2 tsp nutmeg
    Used a small ice cream scoop to form meat balls
    Brown them on Sauté in my instant pot
    Than added them all in cover with veggie broth add 3 bay leaves
    Steam setting for 20 min
    Omg they are the real deal tender meat balls
    Add them to marinara
    Pea protein is a total game changer Girl

    This has become a staple. I just tried putting them in the oven at 400 once sliced, they made seitan chips so crunchy and good.

    I have just finished making this a couple of minutes ago. The hardest and longest part is waiting for it to cool down.
    But it is amazing. So much protein for sandwiches and wraps and pizza and I guess anything you want.
    I had very simple seasonings and it still tastes amazing.
    My vital is years old and still works, clearly.
    I can't get over how easy this is.

    My boyfriend loves the versatility and macros in this recipe. He has been raving about how high his protein has been without trying very hard. Seitan, tofu, plant based protein shakes, and beans and legumes have been helping him hit even higher numbers in the gym. I did the slices in my food processor but had an issue with the logs getting the blade stuck, so I had to press down hard while holding the lid while I fed through the tube which resulted in almost a shaved neat consistency. Not bad but was going for the thicker slices seen in this video. Oh well, making again now and will cut into small chunks. Thanks for sharing this!

    I can't believe that I never thought to use my food processor slicing attachment to cut up homemade Seitan into thinner slices. I always end up with giant chunks trying to cut it by hand. Using the food processor is gonna be a game changer for me! I've been making a variation on your lupini Seitan nuggets and will have to try out this recipe too.

      @@annabellebarkley403 it’s such a time saver!Just make sure that your Seitan is fully cooled off… If you try to slice it while it’s still warm it won’t work.

    I just made this and is was so good! I'm always trying to find a high protein source for my husband who is 287lbs of muscle. He is very sensitive to soy and if he eats something with soy he normally vomits for like a day. I've been Vegan 6 years and our son has only been vegan but my husband has ate meat when he's away from home. This recipe is going to be a game changer for him. I feel like I'll be able to send him with lunches he'll actually eat and won't make him sick. Also my 5 year old just ate an entire log of this he said it's better than any tofu "chicken" ever even from the store.

    Hi Nathalie, I have now seen so many videos about making seitan yourself. Yours is the best in my eyes. As I don't have peaprotein, I would just use wheat gluten, nutritional yeast and the sesanings and soy sauce. Would it be the same result even though peaprotein hasn't been included?     I've been using a mandoline to shred my seitan. I knead it with my food processor blade, but never thought to shred that way. That's genius!

      You can do so many things with it… wraps, burritos, use it for meal prep and add sauce, salads, etc… possibilities are endless. I also plan on sharing a sweet seitan soon🥰

    Just realized I'm eating your seitan as I watch this and I have all the ingredients. I love Anthony's, so easy to have them just shipped to Hawaii instead of searching everywhere. Quick question. Have you ever tried slicing them using the attachment for the Kitchenaid? I was thinking of getting that as I don't really have room for a full-blown food processor. Thanks for the video.

    Hi Natalie, I love your channel! I made this seitan and I don't know what I did wrong, but it was SO rubbery and chewy it was nearly inedible.... BUT I saved it by adding it to a chilli with lots of garlic, ground cumin, coriander, etc and it's delicious!! :)

      You didn’t do anything wrong💕 Seitan takes some trial and error to get it just right to the consistency that you enjoy. This happens when it’s kneaded too much before cooking. I like the really tough consistency because I can feed it through the food processor slicer a lot easier. If you’re looking for a more lighter consistency knead for half of the time Or until all the ingredients are combined and don’t over mix.
      If you under mix you will get a bread like consistency And if you over mix it’ll be a hard Seitan. It will take some practice to finding that balance right in the middle.🙌🏽

    Have you ever tried to freeze it? I usually do meal prep for a month and wondered how long it would last before it would turn ... if that is even possible with the ingredients used. BTW - this has been a game-changer for me. I used to average maybe 50 grams per day of protein ... not healthy for my weight ... anyway ... now I am up to 100 or more thanks to all your recipes. I really appreciate you!

      Mmmm! I made it and I think it's the best-tasting seitan I've made! My dough didn't pull togeter well so I'll use a little more water next time. But the taste!

      yes, you can freeze it in an air tight container or reusable baggies. I recommend portioning it out first.

    This is the second seitan vlog I have seen of yours and I love ❤ this one as well. I can definitely see how versatile this can be.
    So do you add the pea protein to bunk up the protein amount. There is a lot in vital wheat gluten already. I have both so I don't mind doing it but just wondered why you add pea protein.
    I have saved this because it will be the main way I make seitan now. Thank you

      I like to add Pea protein flour to break up the texture of just straight vital wheat 🌾 . When I use vital wheat gluten on its own…it’s too gummy for me. I know a lot of people love that texture, but I don’t. Adding a second component to the recipe, in my opinion improves texture slightly. You can totally just use vital wheat by subbing the pea for more VWG if you prefer ☺️.

      If you’re making it at night time just let it cool overnight in the refrigerator and slice it in the morning. I put it through the food processor the following day and I find it slices a lot better.

    Hey Natalie! Could you use chickpea powder as a substitute for the pea powder? I can't find the powder on amazon for the pea powder from anthony's. Love your videos! About to start my plant based prep at the end of this week and I'm looking for different protein sources aside from tofu and yves veggie patties that i had used in my last prep! Any advice on what you do to spice up protein prep would be so helpful

      Yes you can! It will change texture and flavor slightly (more like a bread consistency) and macros will be slightly different as well. Have you tried pea crumbles? Similar macros to seitan as well.

    Hi Natalie! This was the first seitan recipe I made of yours that did not turn out well. Could you help me figure out went wrong? I mixed mine with the same kitchen aid. Slowly at first then a little faster at speed 3 for 3 minutes. The dough was hard to mold. I baked mine for 20 minutes one side and 16 minutes the second side. I waited about an hour before I tried to slice them with my mandolin and I broke my mandolin trying to slice them. Mine are like rubber. I can barely get a knife through them. Did I over kneed them or bake them too long? The color and toastiness looked just like yours. I’m just so sad I did it wrong. I’m still going to eat them because I don’t want to be wasteful. Taste is great, but the rubber texture I got is not desirable.

    Great stuff! I am going to try it, but... all of that contains a mere 35 grams of protein?! I find that hard to believe. Just looking at it, I am fairly sure there is more! (APPEND: Oh, so it's PER SERVING, and all that is 10 servings haha... whew! Makes more sense :P )

    Does pea protein affect the texture much? I’ve made a few different seitan recipes before, including your recipe without pea protein today! I’m sure it would be a great addition for more protein

      Yes, it does a bit...it's a bit more firm, that's why I recommend slicing it very thing for better texture.

    Hi Natalie, i've been wanting to try this recipe for quite a while, but i can't find any premium pea protein where i live, so i was wandering if i could use oat fiber instead of the pea protein but i don't know if it'll work. (Even though they're both powder-like so maybe it doesn't really matter which one i use as long as it's a powder or has a flour like consistency?)

      Hi, you can sub it out for chickpea flour… I don’t recommend using oat fiber for this recipe.
      It’s not the same as pea flour, pea flour is mostly Protein & no carbs. They both react different.

      yes...you can freeze them for 5-6 months in an air tight container.

      Yes, I recommend letting them cool completely before slicing them…Then put them in an airtight container and you can freeze them up to five to six months.
      And yes to the sauce🙌🏽 sauce it up!!!
      That’s why I made it very basic so you guys could have fun with adding sauces or other condiments that you enjoy. I love vegan honey mustard, Barbecue sauce, Or Caesar dressing for a Caesar salad.

      Great question! There's so many different methods to make seitan. Some are more complex than others, I like to keep mine very simple. I also enjoy the texture of baked seitan.

      Unfortunately not for this one. Seitan is made from vital wheat (You can’t make it without it).

      You can totally use veggie broth too! I had the “liquid ingredients all mixed” coconut amino’s with water.

      You can use more vital wheat… instead of pea flour…I prefer adding pea protein, because it gives me a better texture.
      You can also use garbanzo bean flour (but this will change macros). Lupin flour (harder to find and pricey) or soy flour.

      I let it completely cool before slicing
      Remember, this is a seitan that has to be on the tougher side, so you can easily slice with the food processor or a sharp mandolin to get those nice thin slices.

      Seitan by definition is made of gluten flour, so it's literally not possible.
