Don’t give up that bucket list. My grandfather was born in Napoli and my whole life. I wanted to go to Italy. I never thought I was going to make it. My beautiful sweet daughter took me for my 60th birthday. It was one of the best experiences of my life, Roma, Napoli and Positano all beautiful places and the food is absolutely amazing. Once you eat in Italy, you will absolutely understand what he’s talking about when it comes to the chemical taste. I could not believe how clean and fresh all the food was. We thought we were going to gain weight. The food was so clean and fresh and we did not and we ate a ton of food. It’s such a beautiful country too, I really pray you get there one day.

Omg! My Irish great grandmother fell in love with (and often traveled to) Italy in her younger years. She passed in 2012. But she would make a dish she called “cheese potato “ which was thin slices of potato and onion layered with parm & Gruyère and cooked until a crispy golden brown. I’m realizing now that she was probably trying to make Frico! Thanks for sharing this recipe. I love making my grandmothers version, but will definitely try the Friul way ❤️

Hi Jessi&Alessio, I have been living in Germany for almost nine years and I am originally from South Carolina. The winter is the hardest time of the year for me ,especially in our area, which my husband calls Deutsche Suppe.-German Soup.He goes out of his way to spoil me during those times when I am super homesick and can make fantastic pulled pork BBQ and takes me to Düsseldorf to a place that makes some of the best Nashville hot fried chicken I have ever eaten😊. As someone who lives in Switzerland 🇨🇭 and i think i can help with the pronunciation. The cheese comes from the area of Gruyères, Fribourg and is one of the most iconic cheese out there. Since the area primarily speaks French the name is pronounced in a very French way. Ao its Gruyère i.e. Groo - Ye-r (the r is from the throat, the french R). Cheers, love your videos ❤

I know how Alessio feels about homesickness. It reminds me of my maternal grandpa that I've never met (as he died before I was born) but heard stories about from my mom. My maternal family from Cuba first came to the NY metro area before the Cuban Revolution, as they didn't like Batista. They lived in New Jersey but until the early 70s, as my maternal grandpa felt homesick as he missed Cuba's weather, so he wanted to move to Miami as it was the most like Cuba.
So they ended up moving down there, and although they liked Calle Ocho, my mom said they felt isolated as they had to do everything by car. The family ironically felt homesick for the NYC metro, as they missed the walkability and transit freedom that the NYC metro area had (this was before Miami even had transit). My mom also hated the warm weather and preferred NYC's cool climate. So they ended up moving back to the NYC metro. Where she would live in Rego Park, Queens and the Upper West Side (when those areas were still cheap), meet my father, and would have me in the early 2000s.

Gruyère is pronounced Groo-yehr (this is what anyone with a culinary background will tell you), and while many think it comes from France because of its French name, it's actually from SWITZERLAND! It's named after Gruyères which is in the canton of Fribourg, where French is spoken by more than two-thirds of its citizens (French is spoken in the western part of Switzerland in general)! Just over two thousand people live in Gruyères as of 2018!
The eagle he's wearing on his shirt is the flag of Friuli, which was created in 1334...making it the SEVENTH oldest flag in Europe! Though my favorite fact I like to give about Friuli Venezia Giulia is that a part of it, Trieste, was once its own independent territory called the Free Territory of Trieste in the aftermath of WWII from 1947 to 1954. This happened as part of the Treaty of Paris of 1947 to cool down tensions between Italy and Yugoslavia as the area was mixed between the Italians, Slovenes, and Croats. Its administration was divided into two areas, one being the port city of Trieste with a narrow coastal strip to the northwest (Zone A; now Italy) and the rest was Zone B (now the Slovenian coast and Croatia's Istrian Peninsula).

My neice is a florist in Idaho. I am in Oregon. I actually have a cheese fairy in my small town. This is so special and sweet

Frico is my favorite and I’m sooooo happy I took the time to learn to make it during our 4 years in Friuli. We finish our time here in Apr and we DO NOT want to leave😭😭

Friuli is amazing, both mountains and sea always close by. Are you leaving Italy?

Mandi Mandi ! Frico is my favorite Fruilana dish. Can only find fry mantasio cheese at Eataly. Not the same as the soft version. Thanks for sharing your’s and my Friuli heritage treat😘.

I need frico! Thank you, very enjoyable video. I looked up that master chef clip of Chef Luca, too.

I appreciate the additional notes below the video. Thanks you!
I do wish, though, that you put the recipe or at least the measurements for an easy screenshot. Just an idea.

omg can i just move in?..lol.. this is so fun.. My Nonna's family was from Bedonia, near Parma and my Nonno was from San Cassiano, Bagni di Lucca, Lucca.. I love watching you both because it reminds me of my childhood, watching my nonna making Italian food

Can you do this in the same type of pan you do a tortilla Española? Same concept, where you flip. I have interlocking pans,so that way I can just flip it over. This looks good!

My mom is English but married to an Italian (from Calabria), she does something similar but no cheese (she’s not a fan) - she uses left over potatoes and vegetables from a roast dinner and fries them all together. The potatoes get brown and then you eat. Looks very similar to frico - so delicious.

Looks yummy! I see you used Gruyere cheese, what were the other two cheeses? There were 3 blocks of cheese...or were they all Gruyere. Looking forward to making this! 🧀 🥔 🥰

Looks delicious and I want to make this! So they used Gruyere but what was the other type of cheese? I replayed that part but couldn't understand and it did not show in the closed captions - does anyone know? Thanks in advance! ❤🧀

After watching this video yesterday, I had to make it tonight for dinner to try it out. I didn't have the Montasio, so I used Gruyère instead. The frico was amazing!
