For the rock sugar I would suggest dissolving it it a little water and heat until it it slightly caramelised to deepen the colour and produce a more pronounced fragrance.

This is great! Though I actually think 4 cups of water maybe too much. If you're cooking and the meat is not turning golden red then just use 2 cups.
2 cups will work if you use lowest heat, so the liquid doesn’t evaporate much. 😊👍

All over. I don't know where you live, but think butcher shop, large super markets, Italian markets, Asian markets, local farms, farmer's markets.
I got mine from an Asian supermarket. You can always ask your butcher to see if he has a cut like that. :)
