The most impressive thing about the cathedrals and other buildings of the period is to imagine them in their time. They would stand out infinitely more because the rest of the buildings in the 'city' would not be so refined and massive. In Spain there is El Escoral for example, if you imagine it in its time of 1580, it would almost seem a bit dystopian to find such a large and refined complex in a valley. The interior and rooms were incredibly modern for the time. Felipe II lived in the closest thing to an apartment with a very contemporary layout. (Really, if we traveled to the past it would all be very dystopian lol) I mean, most of the surrounding population lived in a popular architecture that was very simple and humble and the conditions were very harsh. Encountering something like that would simply be shocking. As for the comments on woodworking, realize that in those centuries Spain had the best master carpenters in the world and an authentic industry around it. Naval production was one of the backbones of the empire and authentic masters came out and were trained from those workshops. The best in the world at the time made those altarpieces, carvings, choirs, because that's where the money was to pay for them. And also Spain attracted so many others from Venice and the Italian provinces and the Netherlands. Not only carpenters of course, painters, master stonemasons, blacksmiths... There was also a lot of rivalry between the crowns of France and Spain in terms of patronage and attraction of talent. ps: Yes, the cathedral of Burgos was started in 1221 and finished in 1260.
