    You impressed my Singaporean raised hubby!.We made these tonight in northern CA. He remembers helping his Mom pound the fish by hand and I was only the back up with the broth and noodles. They came out so light and fluffy, I never tasted fish balls like this when I was working in Hong Kong YUM! Thank you! So authentic.

    Nostalgia, my grandma used to make fish-balls too but those days, she didn't have the luxury of a magic mix so it was even harder work... my favorite part was when she squeeze the fish meat through her fingers and scoop a ball from hand onto a basin of water... as a child, I used to watch in fascination ... thank you! It was a good revision on how to make fish-balls and it brought back beautiful memories of my grandma too!

    You added your condiments at the end, ie your chopped shallots and chopped chilli, loved the process, though a bit long in preparing, the end your taste buds were famished. One of your better recipes.

    Roland, there are 2 types of Spanish lkeral. 1 it what we cook curry with, the other species is broader and flatter. These are used to make fish balls as they have a lot of KAU ( so called glue). Next when scraping or cutting these fish for fish balls, ALWAYS have a bowl of salt water on stand by to dip the spoon or knife in so there is no wastage of fish as the flesh will not adhere to them due to the salt.

    I am so glad i found this recipe, kuey teow and noodle fishball soup is my favourite but i know live in Europe and won t be able to have it easily. Will try your recipe. I have anchovies but please tell me what other fish I can replace dried sole fish with for the stock. Thank You

    u can grind the ikan bilis into powder form n boil it the taste will still be there most important u still can drink it...will not watse the ikan bilis since ikan bilis is very expensive nowadays.

      Luckily frozen cooked fishballs taste good and keep their bouncy texture when boiled. This is the only kind of fishball I can buy.

    Do you rinse the yellow noodles before boiling it in the stock? Otherwise it'll have the "kee" taste from the noodles which might leak into the precious hardwork soup.

    Hello I used frozen thawed fish and got as much water out and followed the instructions but it was way to wet any suggestions or Twix to your recipe that I can use frozen fish instead of fresh I would like to hear from you if I can use frozen fish maybe omitting all the water that you added I don't know please help

      Hihi. Yes that should be fine. Try not add any water in and remove any water if you see a lot of it after you have minced the fish. You may also add slightly more flour - not too much though. Hope this helps

      Hi Jennifer. You can replace it with plain flour in the same amount. Just note that the fishballs may not be as springy but shouldn’t be much of a problem. Happy cooking!

      Hi Rolf. I just asked Roland. He said this fish has more fats so they are not very suitable to be used to make fishballs. You can go for cheap white fish that’s not too oily. Hope this helps.

    Thank you for the recipe dear brother. Can you give me a tip how to store fish balls if we want to keep it for latter use, and how long can we keep it.

      Hi Jessica. Please boil them first then you can keep in the fridge. They will stay good for about 2-3 days. Happy cooking!
