Pacific Saury is Cololabis Saira and Wolf Herring is Chirocentrus Dorab The one in the video is Wolf Herring , definitely best for making fishballs.... IF Pacific Saury aka Sanma in Japanese is used for fishballs, the result will be totally different taste and texture

为什么我每次买多少钱的鱼做出来就那么少?我买西刀鱼RM20做出来才22粒。怎样来卖?我270的鱼肉+40g玉米淀粉,是淀粉放的少做出来才少吗?
没有放玉米淀粉的,新鲜的鱼肉跟适量的水,糖盐味精+胡椒粉一点点就可以了。

你应该用错鱼来做了,如果你是买到适合的鱼,照着我的方法去做,应该没有问题的,除非鱼不新鲜没有胶质就打不起来。
记得泡鱼丸的水要放盐🧂要泡兩到三个小时。
