I think there are many reasons why they wanted to end like this. Basically, they want the audience decides, and that they don't want to offend anyone. Afterall, Mike Tyson is a boxing legend, so to have Mike Tyson loses (even though he was portraying some random dude) would be diminishing his real life legend. To have Donnie Yen loses would be totally weird. Afterall, Ip Man is the main character and Ip Man is a legendary grandmaster, so that would piss off a good number of audience. So, you really left with this non-win situation.

These movies are heavy fictionalizations. Ip Man was a great martial artist, but he wasn't an action hero. He was considered good enough to train the Chinese police force so he must have been respected, but his martial arts school in America was failing until Bruce Lee became famous, and in turn brought Ip Man attention. As I mentioned, his teachers Leung Jan and Chan Wah-shun were more famous than he was before that point.
In an interview Donnie Yen said for this fight scene Tyson at some point was not following Yuan Wo Pin's direction. Because he got into his fighting routine automatically and was like trying to push him to a corner and KO him. He said if he duct half a second lesser he would be KO by him. The fist was just like 1 cm from his head and the hair on his head was ruffled by the gust of wind he bring with his big fist. The whole crew was like "Wahhhh!"

The director and co-staffs of the movie were worried about that how huge Mike is against Donny(ip-man) and Donny would end up get hurt if something happened wrong.... But what happened... Donny end up broke one of Mike's finger in the process... You will noticed it in the scene when Donny saves Mike's punches with his elbow... You will find Mike's right hand small finger a little bit awkward posing than the other finger...

This fight Ip Man (Donnie Yen) actually lost because he decided to try and kick Mike in the groin and so everyone knows that it is considered as a cheap shot and Mike went for the upper cut. Mike won by default. *My Opinion*
Donnie Yen is a mix martial artist himself, his mum is a MASTER of a few styles of Chinese martial arts.

Tbh, we wouldnt know the true outcome of the fight. Mike is known for his ferocious strength and speed in boxing, while donnie is well versed in brazil jiu jitsu, muay Thai, karate, taekwondo, judo, wrestling and Wing chun of course. Donnie is kind of a mma fighter while Mike is a boxer sooooo
