Ingredients
* 4 russet potatoes
* 8-10 cups fat(duck fat, lard, beef tallow)
* Salt to taste
* 1 tbsp cornstarch
Instructions
1. Peel and grate the russet potatoes using medium side of a box cheese grater. Add the shredded potato to cold water and agitate it to get rid of the starch.
2. Strain the potatoes and squeeze out any excess moisture using a clean kitchen rag.
3. Add the shredded potato to a pot along with the fat.
4. Heat on medium low until it reaches 210 degrees Fahrenheit stirring occasionally so the bottom doesn’t stick.
5. Strain the potatoes and save the fat for frying later on.
6. Season to taste with salt(2-3 tsp) and add cornstarch. Lightly combine together until fully incorporated.
7. On a lined sheet tray, add the potato to a ring mold and form them into an oval shape.
8. Place the hash browns in the freezer for a couple of hours or until completely frozen.
9. Heat the leftover fat to 375 degrees Fahrenheit and deep fry the hash brown for 5 minutes until golden brown and crispy(fry 1-2 at a time).
10. Season with a little more salt and enjoy.
“That’s it” as if he didn’t just spend like a whole day making simple breakfast item.
But once they're done you can freeze and eat them for another time.

I just got done forming the hashbrowns may I say the process takes forever hats off to you for doing this especially because I only got about 6 out of the potatoes 🥔 i suggest doubling the recipe if you’ve a family of 3 or more🥹

Bro these were my whole main meal when i was an child and it was cooked!, i prefer you to try the hashbrowns with shredded carrots it will give an extra taste for the hashbrowns!

Hey here's an old as fuck Polish recipe for what " McDonald's hash browns" actually are
Which is placki ziemniaczane (potato pancakes), its for a big portion in a big bowl, how many potatoes? Until the consistency is right, thicker but not though to mix, enough to make a blob on the pan that wont flow through the oil
Grate the potatoes, grate one half of a small onion, add one egg, add salt, add flour (as above, until consistency is right), mix
Heat oil on a pan
Put pancakes on the hot oil. Fry until done
No ketchup
Instead make a stew, thick, meaty and brown, consistency of gravy. Its amazing sprinkled with cayenne pepper

I tried this and it fell apart immediately after hitting the oil. Just forming them isn't enough. They need to be packed to prevent separation.

It could have been how much he froze it, how much he blanched them in the fat
It could also depend on the kind of fat he uses to blanch
Duck fat is superior but it's a little harder to get a hold of.
That being said. Yes, for dishes like this, russets are a better choice due to the higher percentage of starch
HOWEVER you are also soaking and rinsing them as well as adding the starch
He also may not have a ring mold which your average kitchen may not have on hand
I have made such dishes with other potatoes and they have turned out nicely. You do have to handle them differently however
Another recipe briefly rinsed the potato strands only once so more of the potato's starch would remain, instead of doing multiple rinses.
You can totally skip the freezing part I made them in 5 minutes and came out good

not sure why everyone is whinging about how long it takes, made the same thing yesterday and it took about 30 mins from peeling to being on the plate.
We do it differently on slavic countries. We use smaller grater, so we don't need to boil potatoes before frying. We also add one egg to the mix.

They will brown if exposed to the air for too long. Keeping them moist keeps their color.
add an egg and a bit more flour then shallow fry spoonfuls, 3 or 4 to the pan.
