I dunno if this works for everyone but usually since I don't want to take lotsa time cooking, I watched from my mom, she boiled the potato(cut like wedges shape) until they are bit tender not fully cook. Then, rinse them out to dry and fry in high heat oil. I thought they gonna be limp or soft but unexpectedly they comes out crispy tho. So I do like that every time I wanna eat potato.
