  • This Episode goes into detail about macaron troubleshooting and learning preventative measures to take to discover where you went wrong and how to prevent/fix the issues. This should make a world of difference the next time you make French macarons.     Macaron Recipe (Courtesy of the Food Network - with a few adjustments)
    1 3/4 cups (189g) Confectioners' sugar
    1 cup (95g) Almond Flour (Finely Ground)
    3 large Egg Whites, cold
    1/4 tsp Cream of Tartar
    1/4 cup (62g) Granulated or Superfine Sugar
    Pinch of salt
    Aged Egg Whites - I have used aged egg whites and I have used Fresh egg whites, and I've had problems/no problems with my meringue using both methods. I prefer to use fresh egg whites. This is my opinion based on experience. Use what works for you!

    Hi Kim! I am going to try macarrones for the second time. I live beside the beach so there is a lot of humidity. I have a humidifier and I think that will help. What is the perfect humidity temperature for coking the macaroons?

    I’ve jsut come across your channel and it’s so helpful! Trying master macarons is soo tough I’m on my 15th try. I’ve had ups and downs no batch is ever the same 😂😩 When you say you break your batter or meringue what do you mean?

      Thank you! And you’re so welcome! When you whip your sugar and egg whites together you are creating all of this air that makes them voluminous and fluffy. If you fold your batter too rough/hard or add any liquid, you push the air out/break the air pockets of the meringue and that, essentially, is “breaking” the meringue. Hang in there, and don’t give up and you’ll be mastering them before you know it! It took me a lot of practice as well.

    I have a issue, my macarons are getting brown but will stay hollow, I have tried different temps with different times and still wont work.

    I have a serious problem. I used to use baking paper before I got a macaron mat for Christmas. I’d also used the Italian method before (been having a wrinkly issue with that lately) until I used a french method recipe. My Macarons were brown, concave (hollow bottoms) and sticky and chewy/crispy. It’s like several troubleshoots clashing at once and I don’t know what to do. Please help me.

    Hi Kim! I notice you don't put sprinkles on your macs. Any particular reason? Are they too unstable to hold sprinkles?

      @@CremeMacarons I do follow your IG. My girls and I love your videos! I meant putting them on top of the shells before baking. I saw the donut ones with the sprinkles. I tried once and they melted through the shell. I thought maybe I did something wrong or that they just weren't meant to bake on the shells. Thanks for sharing your content!!! We love it.

      @@jennameade9770 thank you! I wouldn’t put anything heavier than confetti sprinkles or jimmies on your macarons pre baked. Once they are completely set, bake away, and I’ve never had any issues with cracks. Just make sure they are completely set and you’re baking at a tru 300 degrees F and no higher, that should prevent from melting.

    You can not say 189g Confectioners' sugar and then say 3 large Egg White. The grams count here not the size.
