    A tip for the tzatziki: sprinkle salt on the shredded cucumber, let it sit a couple of minutes and then squeeze water out of it with a cheesecloth or a light towel. The sauce will be firmer and any bitterness in the cucumber will get out with its water

      Every variation sounds great!!I love your tip.. that's how we do it in Greece.The original recipe all over Greece is even simpler though.We use yoghurt,fresh mashed garlic,strained cocumbers,extra virgin olive, salt,pepper,red vinegar and that's it.Sending love to everybody!

      I cut the end and rub the end on the cut end in a circular motion and that helps “juice” the bitterness that comes out

    One of my favorite tricks from my mom, was to cook a small quarter to half dollar size of meatloaf, or meat ball mixture so you can taste it before cooking the whole recipe. You can adjust spices if needed.

    It's possible that the foil you used to cover the lower rack in your oven is keeping it from heating correctly. Check your manual. It usually tells you not to do that. I love the Blondies! Thanks for the recipe.

    I, too, adore caramelized onions. I make them in the crockpot: put a couple tablespoons of butter or oil in your crockpot. Fill your crockpot to the top with cut-up onions and add a bit of salt. Cook on low until caramelized. It usually takes about 10 hours in my crockpot. They freeze beautifully in meal-sized portions!
    In regard to bars like your blondies, you can bake a 13x9 recipe in two 8x8 inch pans. The area of a 13x9 pan is 117 square inches, and the area of two 8x8 pans is 128 square inches - so very close. Just watch the baking time. You might need to reduce it a couple minutes for the two, smaller pans. Handy if you want to take baked goods two different places, or freeze half for another time, or whatever.

    I already own wooden spoons, freeze my veggie cutoffs for broths etc and just now, I finally ordered the dough whisk.
    You slowly but steadily change my cooking life.
    And I life in a bus with a small kitchen!!!!

    We love America's Test Kitchen too! We actually watch the product tests and order things they recommend. Lol! I just started watching your videos a few weeks ago, and I am nearly all the way through the list. I bought the photo storage boxes for my seeds, the roo apron for my mom for Mother's Day, and I am planning to start canning bone broth, spaghetti sauce, and meat. I have been canning for close to 40 years with my mom, but we just do a few veggies. I am ready to branch out to other things now! I love how REAL you are. Can't wait to see more!

      The cheapest cut will come out so tender after pressure canning. Save the expensive cuts for the grill or whatever you usually do.
      Pressure canning meat is my favorite. It is the most simple thing to can for me.

    I'm so glad you showed the radishes, our little 5 yr grandson wanted a veggie garden so bad, so we bought him a small raised bed ad let him pick out the veggie seeds (he of course wanted them all, which made this Grandma's heart happy), but we started with the radish, tomato, peas, cucumbers - he's so excited to watch the videos of the garden and see his own growing. :)

    Unless it's empty, check the drawer beside your stove. You had a pepper grinder in there. I am so jealous of your friends getting to enjoy the great meals you make.     I carmilize my onions in butter not oil. I also add a couple of tablespoons of sugar to speed up the process. Can be white, brown or any special sugar you use.

    Something I just learned from Mary's Nest is to use your fruit scraps to make vinegar! I have some pineapple vinegar and strawberry vinegar going with scraps I would normally throw away. Super excited to give it a try. You are such a blessing and motivation to enjoy being in the kitchen more. Shalom!

    I got a big 50lb bag of local onions last fall and I absolutely stuffed my instant pot with sliced onions to make tons of caramelized onions then froze most of it, using my silicone cupcake liners to portion. It was so handy to use for soups and curries. I plan on doing it again this fall.

    Growing up in the late 70's and through the 80's we made Blonde Brownies. I remember with the recipe we used the chocolate chips were sprinkled over the top of the brownies once the batter was spread out in the pam.

    I have really enjoyed watching your videos! I love to cook and bake and previously cooked for a week/month ahead - made homeschooling much easier. My tip for you: when zesting a lemon/any citrus, hold the fruit in your left/nondominant hand and run your microplane over the surface of the lemon with your right/dominant - it's easier to avoid zesting into the pith of the fruit. Thanks for helping me learn more about homesteading!

    Mujadara (rice and brown lentils topped with caramelised onions) is also called “Koshari” in the Middle East.
    Look it up there are so many more toppings plus there is a tomato sauce that goes on top at the end!

    It's an added step but I really like grating the cucumber and adding salt so that it can sit and draw out some water. After about 10 minutes I squeeze it well and add it to my yogurt mixture!

    Those beef patties look delicious! Cover the onions, to speed up the cooking process; all the steam, that would help to cook them faster, is being wasted. Then, of course when they’re all softened, uncover them to let the steam/juice evaporate and they’ll caramelize quickly enough. You don’t need foil or parchment paper. I always make brownies in a glass baking dish, and I only spray it and never have a problem with them sticking.

    Oh Becky, you have to try making Cucumber Kimchee it is super easy, spicy with Korean pepper, and last in the fridge for a week or two. I shape Saulsbury steak like you did your beef. I always put a clean cotton cloth in my salad fixings or vegetables to store them. I really don't like to use alluiminum on any food, I use parchment. I pray you have a safeand blessed trip, love and prayers.

    One of the first meal prep video's I watched, you made kebab and said you ate them with a delicious lentil dish. I was intrigued so I asked for the recipes in the commentd and you responded.     I've been having Mujaddarah my hole life and I'm excited to try it your way, if you're wondering what's different between the two we fry the onions on high heat while attending them the whole time until they are golden and crispy we also don't add any spices the rest is exactly the same.

    The cutting the onion thing makes sense, it's like cutting across the grain in meat, or even wood, it makes it softer/weaker.

      It’s exactly like that. If you want them to cook down like in sauce, cut them perpendicular, for recognisable onion strips, cut them pole to pole.

    Becky, check your manufacturer manual for your stove. Your problem might be from putting foil on the bottom. We just got a new stove and it specified to not line the bottom because it interrupts the heating element.

    The patties that you made is called Kofta’s, and are usually formed around metal or wooden skewers and also made with ground lamb. I must say, I would prefer ground beef, since I’m definitely not a lover of lamb. Usually have it with the cucumber sauce, salad, and put in pita, or a wrap. The sound of the lentil rice salad sounds amazing!! Will definitely have a go making it! Also, have a go with a cheese you have to cook called, haulumi ( or something like that). Usually have that for vegetarians ( Greek cheese ). Thank you for sharing this meal, definitely going to make this at our next barbecue/ cookout!

    I found your channel not long ago, and absolutely love it! I am also in WA. North Lake Leland (Quilcene). We are transplants of CA and I am so confused with gardening up here. I follow you for recipes and gardening advice. Like yourself, I preserve, can, raise chickens and make my own sourdoughs. I would love more advice on gardening, specifically when to plant and harvest up here. It’s SO different from CA.

    Use the toothpick method of checking the center of the brownies. If it comes out clean, its done. Works well. You can always either spray the foil or buy non stick foil for it too.

    Can’t wait to try some of the things you cooked in this video…yum! You can make caramelized onions in your instant pot. You add butter, salt, and pepper and cook on high pressure for 5 minutes, vent it and strain the liquid. Return the onions to the instant pot and sauté them for a few more minutes. Definitely a quicker process then doing it on the stovetop and tastes just as good.

    When I want something to cook a little longer like brownies I turn off the oven and let them cook from the residual heat.
    Your rice and lentil dish is very much like a dish called koshari. That is made with the addition of pasta.

    So nice to see you make Moroccan Kefta! You put a different style to it! My husband is in the Army and is a 1SG however he was born and raised in Morocco! Since you have quite a bit of carrots may I suggest you look up Moroccan Carrot & Orange juice salad.

    I use cinnamon in my fish tacos and nutmeg in my sausage kale soup. They completely make both dishes amazing, but initially I was nervous to try them.

    you should #1 rinse the lentils when you drain them to cool them off. #2 fry up a small burger to check the seasoning of the meat...Looking good...

    When we go on trips we shape our meat balls and cook them. We then freeze them and transport them frozen. That acts as ice as well for our cooler. Plus it gives it a longer shelf time

    Becky next time you make the tzaziki remove squeeze the Cucumber and remove some moisture. My husband makes it and it keeps it less watery. The food looks soo great. I really want to try the carrot salad looked incredible.

    Slow cooker Caramelized Onions 0 I usually do at least 3 pounds at a time!
    Put the onion slices in a 5-quart (or larger) slow cooker, along with the butter, olive oil, salt, and black pepper. you can put as much onions as your crock pot/slow cooker will hold because they cook down and then divide for recipes! Cover the crockpot and cook on low overnight, or for 10-12 hours. The onions should be dark golden brown and soft.

    My friend Maya friend is from Lebanon. When she emigrated to the US, he was surprised that we use cinnamon in baked goods. She had only used it for savory dishes. Now, she does both.

    Always squeeze the cucumber juice out of the cucumber. That way is is not too watery but thicker as spread. We use either dill or parsley in Greece. We also use a Tbsp or two of red wine vinegar, not lemon and tons of garlic😂
    Of course S/P and the splash of oil.

    When I caramelize onions I use my mandolin on it's thin slices blade and it makes it fast and simple...I'm the not the best at slicing thin slices with a knife lol

    Your Morrocan meatballs is the same recipe as my Beef Koftas. When my kids were younger I used to roll the meat mixture into sausages and put them on a skewer and served them with mint yoghurt, steamed potatoes and green beans. My kids affectionately called this dish Pooh on a Stick 😂

    Hi Becky! You may give the Turkish version of 'cacik' (or Tzatziki in Greek) a try as well. If you ever find Turkish yoghurt in store, that'd be great but if not, Greek yoghurt would be fine as well. Add some garlic (not garlic powder), some salt and some dried mint to your yoghurt and cucumber and mix everything. We usually do not like the consistency too tick so we add a little water as well. If you'd like it a little more crunchy, like I do, try dicing your cucumbers instead of grating them.
    You can use that as a base souce and create your own salads and soups. You can add some orzo and sweet corn to your cacik and that would make a nice yoghurt based summer 'salad'. You can add some olive oil, more water, cracked wheat or couscous to it and and that would make a great cold summer soup. Very nice base souce to go crazy with using different ingredient :) Love from Turkey!

    My mother and grandmother used rolled oats in their meatloaf for as long as I can remember. They've never had to process them or anything. You're the first person I've ever seen to use them as well ! Personally that's all I ever use in my meatloaf and I get rave reviews on my meatloaf everywhere I go. Same with my meatballs and I use a ground chicken and beef blend. Love you!

    Grilled pineapple with cinnamon is unbelievably good! Highly recommend as a side while grilling. I had it the first time at a Brazilian Steakhouse (the Grill from Ipanema in Seattle) and now make it all summer long.

    Radish grow really well in plant pots, so do spring onions and salad! If you only have a small space you can still grow some stuff!

    Mujadra (pronounced moo-jad'raA) is a favorite fasting meal during lent for Assyrians. If you enjoy Tzatziki and want to try something new, instead of the cucumber, add young purslane leaves (they shouldn't have flowered!) and a few ice cubes as it shouldn't be thick to the rest of the mix (garlic powder, yogurt, salt). Enjoy!!

    tip for the tzatziki, grind the cucumbers and press out as much moisture as possible, use greek yoghurt or yoghurt with 10% fat, fresh garlic and a tiny amount of sugar and lemon juice. let sit for a few hours. awesome with anything grilled

    Little tip to enhance the carrotsalad… blend in some raisins. Either whole or blended up in your vitamix and put in your dressing

    I use oatmeal instead of bread crumbs or crackers in my meatloaf. I learned this from a lady that I used to babysit for. I didn't care for meatloaf before this because I thought it was too dry. Now it is one of my favorite meals. The oatmeal absorbs the juice of the hamburger and makes your meatloaf so much moister.
