I think you must have asked them what cuisine you sell most for breakfast lunch dinner or brunch? I have answers to all of them... for breakfast, go for South Indian for brunch, go for Continental if possible for lunch, going for local/regional cuisine will be preferred most, like in Gujarat, Gujarati thali will be preferred, in Maharashtra, and so on... and the reason is, Lunch is the most sensitive meal of the day as no one wants to upset their stomach as they are still in between of the active/working day and people do trust their local meal/cuisine and their gut has been inherited to digest their local cuisine. for dinner, go for the North Indian, because dinner is the most "insensitive" meal for Indians. We keep doing experiments during our dinner time which is completely anti-ayurvedic! North Indian consists of Curries, Tibetian, and tandoori dishes.
I have observed a lack of healthy foods..like salads and proteins..not sure why many players thing of it..but if such outlets are set up around gyms and fitness centres it plays better..and who doesn't want to have bowl of healthy food right after a gym..unless they want to go home n cook . Given time constraints people would love to see it.
Very obvious answer is people always prioritise taste over healthiness. And healthy foods are generally not nearly as tasty as unhealthy/junk foods. Also sourcing healthy ingredients or replacement ingredients can be costly and hitting margins can be difficult.
