Fermenting something means it is no longer raw. Applying heat to food is not the only way to 'cook.' Aging and fermentation are another method of 'cooking'. If people only pull themselves out of their cultural comfort zone and realized there are other ways of doing things...
I'm Korean, food poisoning from Gejang(fermented crab) is well known to Koreans, and it is defenetly something a cook or a consumer needs to be cautious. We see this in news pretty often, and i had a stomachace few times from eating Gaejang, and now i totally avoid the dish, even though it tastes so good. If you copy paste '간장게장 배탈' in google you will be able to find numerous news videos and articles about it. You can use google translation feature to just get a glance of the news.
@@syunaday2892 Yes. It tastes so good, taste wise it's at the top tier of korean foods. However,in my opinion it is a dish to be even more careful than eating sashimi or sushi.

I'm craving this so bad, now. My mom used to make the best gejang. Unfortunately she passed a few years ago. I learned most of her amazing recipes, but I haven't made gejang before. I'm going to experiment until I get it right!

Those are the same crabs that taste good in gumbo! I grew up eating these crabs when my Dad was stationed in Maryland, my Dad making gumbo, and my Mom making gaejang, and eating other yummy seafood! Oh the memories!!!
I’ve never tried it but it looks delicious. I live in Canada and I grew up eating raw egg mixed with rice, sashimi and I’ve tried yukhoe (raw beef) and I haven’t yet died. Fermented food is good for you. I didn’t learn about the weird fear of fermented food or raw food until I took a foods class in middle school and my teacher said: “that sh*t will kill you! It’s unsanitary.” I was just like: 😒 *really*? So in the west we can eat all this chemically processed junk but not healthy cuisine that has existed for centuries. Ok.
Noticed familiar music here! The background music from 22:04 onwards is composed by Yamashita Kousuke for the anime Chihayafuru. The title of the track is “Katsudou Kaishi”.
What kind of soy sauce they are using to marinate the crab? I would love to try to make marinated crabs. I love kimchi and I learn to make just a simple kimchi. There are so many things to learn Korean dishes.
I thought fresh water mitten crabs were only available in Shanghai west(2 hours), small rock crab they catch with light are the most flavorful crabs, I think. great program! I was born near Taean and have great memory of eating crabs.
It took me 18 years to build up enough courage to eat raw crab... but once you try it, there is no turning back. I have sensible stomach, so I can’t much... but it is soooo good.
Like everything else, fermented crabs is a cultural food. It has been many years since I've had fermented crabs, which was common at my grandparents dinner table when I was growing up. I loved the tastes of fermented crab in soy sauce. It is something people ate seasonally, and whilst eating it, you just appreciate the flavor of the occasion it's food at its simplest form. Unlike complicated European Cuisine. You cannot compare fermented crabs to 'artisan cheese' from Europe as an example. I love both, they can only be appreciated at the time of eating and the occasion.
The reason why soy sauce, which was made with crabs, boils more than three times is to sterilize them. It is easy to cook crabs by boiling or steaming them. But it's not easy to keep the fresh taste alive. Soy Sauce Marinated Crab in Korea is a recipe designed for this. You don't have to worry about bacteria. Fresher than any other dish.
Eating raw animal protein of any kind is risky. But decide for yourself if lung fluke, cholera, or Vibrio parahaemolyticus is worth it. There's a reason that different cultures eat raw beef, but no one eats raw chicken or raw pork.
No, the soy sauce does not only season the crab it also gets rid of all those parasites and bacteria. That's why we don't eat crab sashimi but we eat them fermented in soy sauce. After all fermentation is done in order to stop the seafood being rotten
After watching this video, I started to crave for some marinated soy sauce crabs. I have never had this dish before so, I begin to venture out for any Korean restaurant that serve this dish. Fortunately, I found one but they didn’t have the marinated crab. Instead they have the red spicy raw crab. It was pretty good though I’m still in search for the marinated soy sauce style.
I made one. Soy sauce from coconut, rosé wine, chili, ginger, onions, garlic, peppercorns, sugar, lemon, apple and pears. Boil. Marinated with shrimp though still tasted good.

true but microorganism cannot die with this type of fermentation...
@@broccolayy that's why there's a large amount of sodium in it. Bacteria generally don't live in overly salty environments.
