Kokomi is specifically a military nerd so she does video essays on anything related to military tactics, strategy, logistics, etc. Like history, theory, analysis of current-day wars, and occasionally reviews battles and wars in movies and TV shows.
Heres my take on some of these characters:
Itto: definately one of those fitness channels all about body building and stuff. (or a more wholesome but only slightly less controversial version of the Paul brothers with Kuki and his gang).
Yanfei: shes like one of those conspiracy theorist channels where she just discusses and or debunks things or just a news/politics channel.
Diluc: manages a business channel for his company.
Kaeya: mens fashion channel does stuff like reviewing clothing brands or perfumes and giving fashion advice, likes to reference his celebrity brother a lot in his vids to mess with him.
Shenhe & Rosaria: read creepy pastas with monotone burgerkingfootlettuce voice (Xiao makes a single guest appearance voicing a character and is never seen again).
Ei: martial arts channel but everyone watches just to see bouncing booba.
Albedo: has an art channel but exclusively digital speedpaintings with relaxing music, randomly dissapears for months but comes back eventually.
Zhongli: starts out as a history teacher but quickly sees where the free mora is at and evolves into a more successful channel narrating mytholgy and folktales with his godly voice.
Eula: drama channel, does some dancing and music too from time to time.
Yae: manga and light novel reviews, possible furry (or not) vtuber and embraces the title and character of internet mommy.
Chongyun: high difficulty rythem games, hard ass no damage souls like runs, or speedrunning popular games. Never shows his face or speaks.
Qiqi: mascot for Bubu pharmacy ads produced by Baizhu.
Fischel: independant vtuber who never breaks character, videos edited by Oz (...somehow).
Hu tao: mascot for her own controversial business adverts, somehow manages to get all her vids demonitized on the official funeral parlor channel.
Mona: astrology and fortune telling channel, or just a twitch thot who spends her whole camera time in swimsuits (probably both tho).
Tartaglia: makes toy reviews to keep Teucer off his trail.
Cloud retainer: stalking Ganyu & Shenhe , her vids ft. other adepti, Ganyu and Xiao keep trying to avoid her due to their camera shyness but only Xiao is successful.
Jean & Barbara: sisters react channel, Jean is usually too busy tho so Klee fills in for her. Barbara occasionally convinces Rosaria to make guest appearances but only when reacting to edgy shounen anime like AoT or something.
Gorou & Kujo Sara: imagine Shadiversity, personality and everything one to one except hes a doge-boi / hot tengu girl, they would probs collab a lot.

Xingqiu and Chongyun would have Buzzfeed unsolved with Ryan Bergara and Shane Madej type videos where Chongyun is super serious and Xingqiu is just messing around not really believing any of it.
Xingqiu just kind of makes fun of both Chongyun and the ghosts as they visit local haunted spots and houses.

While she's telling a story, she'd see a message from Chat, saying smth like "Have you considered making a channel to share some more stories?"
After being shooed away by Ganyu or smth, she checks out how to make a TH-cam channel and then starts a storytime channel, probably reaches out to Aether or someone to get some background video to play while she's storytelling.

Also since she does recite poetry with Xingqiu I bet she'd have a side channel about that. She has absolutely no idea its him and he will never in a million years tell anyone about it, but he fully supports the non-alco rep (Kaeya knows and has poked fun at him about it)
Kaeya and Rosaria run a channel together reviewing drinks while they chat. I don't know about what, but while the video has a chill, sophisticated atmosphere, you can't help but think they've at least done something illegal in the past.
Aether and Lumine would travel together running seperate channels. Aether would make asmr videos where they're walking through the forest with the sound of crunching leaves, or through the city with the vague sound of crowds. While Lumine would make videos about what they actually did, their experiences, food reviews and the like. They love Diona's drinks, and always stop by when in the area.
Kazuha travels too, but his content would be mostly nature, with some talking and ad lib poetry to sum up the experience. Sometimes he would cross paths with Aether and Lumine, and collab before parting ways again. He used to have someone else filming him as he traveled, but then he didn't upload for some months and then came back alone, filming himself. He never explained why, but his viewers figured something must have happened to them.

This is really specific but I think that Kokomi would be the token 4X and/or Paradox RTS gaming channel. She makes her videos about pure strategy games where you manage armies, and she discusses her strategy while adding in things that she has read in books to reference historical events. I could totally see her play as Watatsumi in a HOI4 mod which takes place during the Archon war and she explains who Orobashi, Mooun, etc were while deciding where to allocate her military factories and what generals to assign. Or maybe she is doung Ryukyu world conquest in Europa Universalis
