    You, My Dear Baking Guardian Angel, taught me how to make the most perfect puff pastry ever. I make a few batches a week just so I can make wonderful things for my friends and family. Croissants, palmiers, kouign amman, tarts, galettes, all manner of wonderful dishes that have blessed my life. I have so much to thank you for and the greatest way I know how to show thanks is to cook for someone. I obviously cannot do that but know that my next batch of perfect Erin McDowell croissants is in honor of you.

    You are so awesome! Love the energy and personality you bring to baking! Thank you! I do have a tip for you, to prevent separation of the condensed milk frosting.....use cold condensed milk. This is the ONLY buttercream frosting I like so I make it quite a bit and it never separates if I used the condensed milk straight from the fridge.

    Hey Erin! Love all your videos and recipe books…especially, “The Book on Pie”…so beautiful and creative…when I steal a few quiet moments in my day…I look and marvel at your book on pie. …My mother is celebrating a momentous birthday in early December (she doesn’t want any of friends to know her true age…so I can’t divulge it here!😂) ..in Vancouver BC…I live in Ottawa, Ontario …and will have no kitchen to speak of in which to bake ….so I plan to make a sheet cake, freeze it …and bring it with me … with frosting and decorative bits in tow to Vancouver. She, like your parents, doesn’t care for overly sweet frosting….f loves carrot cake ..and I love vanilla cake …so I will also bake both as you did …and somehow assemble her’s using half carrot and half white!!! I am super excited!!! I love this video…because you think of everything…right down to making your own cinnamon and vanilla sprinkles. …Love your energy, gurl!!….You are so uplifting and inspirational!

    Love white wedding cake. When I was younger and went to a wedding (we have a large family!) we would always bring home leftover white wedding cake wrapped in bride/groom napkins. Yum!

    Lmao, you are somehow one of my number 1 baking resources these days. I just made a toasty spiced toasted coconut and toasted almond flour whipped cream frosting/mousse using your peanut butter whipped frosting recipe as a base. I def have to make a sheet cake to pair with it! Thanks!

    Watching this makes me want to go to the store to get ingredients instantly, Erin has an amazing effect of turning a boring Saturday into a "hmm maybe I will bake a cake" kinda of day. The only thing is, I'm not a fan of dessicated coconut, does anyone know what effect this will have on the cake in terms of moisture?

    Erin, my kitchen has been torn up for almost 2 years so no stove, no ovens, no good solid baking possible. I think I'm going to do both these two. cakes in my new Thermador double ovens ( convection)! They both look amazing in their own way, and I LOVE the whipped cream/cream cheese idea! You are a genius!!! Please don't ever stop creating!

    One tip to making your own sprinkles instead of just using a normal tip use a grass tip so you get multiple lines at one time if you want to create interesting pieces sometimes you get little curls and swirls or you end up getting a little hashtag marks it can just be something super funny

    I love condensed milk buttercream. Nobody in my family likes American buttercream because it is so sweet, so the default is SMBC, but sometimes that is more than I want to do. Russian buttercream is easy, and great in vanilla or chocolate (cocoa)-I imagine it would work as a lemon, banana or coffee frosting too. It turns out light and fluffy, is great on cupcakes and cake. It pipes beautifully and though I hear it is not strong enough to use between layers, it works fine on the 6” cakes I make most often. Glad to see you bring it into the mainstream.

    I am going to try the vanilla cake and sweetened condensed milk buttercream. I haven't made a sheet cake in a very long time. I've never even tasted that frosting. This is perfect for our end of summer family get together!

    I made the wedding cake. Oh my richness!! My butter was way too warm for the frosting as it is 90 degrees today. It seemed too soft so I popped it in the fridge for 20-30 minutes and it came together into a luxurious creamy frosting!! Thanks for a great class Erin!

    My wedding cake was also carrot cake! Your parents have good taste. Because it was so heavy we did a small three-tiered cake (with fresh flowers) for display and cutting, them we had the rest as sheet cakes to serve after dinner. This was a bit before everyone did fresh flowers and non-traditional cakes so I got a little bit of push back. (I’m guessing I’m somewhere between you and your parents?) Anyway- LOVE all your videos and make your Apple Butter Quick Bread at least 2x a month. (With tweaks. Like Sweet Potato Butter, coconut yogurt and coconut sugar topping.)

    Your frosting for the carrot cake sounds great. I found I like something not so sweet with carrot cake too, but tend to go with a lemon cream cheese frosting. It’s still sweet, but not as overpowering as the usual American buttercream. Glad to see your recommendation.

    Are half sheet cakes appropriate for a wedding? For me, this is easier to make, decorate, transport and cut for a smaller wedding. My sister says her second wedding is going to be informal and she really does prefer a simpler cake for her event in a year or so. Any advice is helpful. I want to do the right thing.

    Erin I have a QUESTION ABOUT THE WRITTEN RECIPE. First, I'm so glad I found you! Love watching your vids! I really, really want to make this white cake but when I printed the recipe, some of the grams-to-cups equivalents seemed 'off'? I think you like to weigh the ingredients rather than measure so that's probably safe. But for just one example, if the sugar is 454 grams, that's closer to 2 1/4 C rather than 1 1/2 C? Check milk too! I'm looking forward to baking and eating this cake!

    The white cake is similar to Dominican cake, but instead of milk we use pineapple juice and Italian meringue for icing 😍🥰 it’s my favorite cake of all time

    The Russian buttercream is AMAZING. I can't recommend it enough. I didn't have vanilla extract,, so used a touch of orange flower water. It was exquisite. Thanks, Erin! 💟

    Hey Erin love the channel. I am looking for a combined cream cheese and mascarpone cheese frosting for a carrot cake with pecans, coconut and pineapple spiced cake. Goal is less sweet frosting with hints of flavor and a tropical version of cake. No rum in this one…but an option. I had such a cake in Aruba on my honeymoon 30 years ago. I haven’t found anything that is close. Maybe toasted pecans first? Looking for help.

    You solved my problem with cream cheese frosting. I’ve avoided it because it always felt too rich and heavy for me. Though that’s probably more because I’m huge fan light airy cakes like angel food/chiffon cakes and especially white cakes.

    I will pipe tiny designs like hearts or daisies, I'll use a star piping tip to do little dots which you can also just do dots with the normal piping tip. Also get a little bit more detailed and do rainbows, ladybugs, keep it simple. I also like to pipe letters that way you can go and spell something out but if you add a small little extra line at the bottom of the letter you can stand it up in the frosting and not have any of the letter disappear
