    My nan brought over the traditional a family Xmas eve ox tongue. Always the favourite. Kids loved it too. Better served sliced rather then whole as it does put people off tbf.

    you can just boil it and then pill it. it will be more easier.

    interesting, you could not peel the tongue. I cooked one after watching your recipe because the last one I dealt with was more than 30 years ago and I wanted to refresh my memory. Well I could not peel it either. So I asked my son, a real chef! he laughed at the thought of posting a video where it did not work. One should peel the tongue while still boiling HOT.

    Why the brining? Is the taste so horrible you need that much salt to cover it up?

      So it lasts longer, if you didn’t brine it I don’t know whether it would work as well

      You brine every meat, if you can. It just adds flavor. Tongue tastes pretty good, texture is good too as long as you trim it.

      what are you talking about ? horrible ? it has a subtle soft taste ans is delicious. Bet your granny used to cook oxtail !!! you can always slice it and serve it with a madeira sauce and boiled potatoes delicious as well !
