I’m a 75 year old Southern fried okra lover. I didn’t know you could have fried okra without flour and/or cornmeal…but you can. We just got up from the table where we had okra cooked exactly as you shared in your video. It was so good! I feel so bad for all the fried okra lovers that may never have “Mattie Okra”. My wife and I are thankful that we have had it on our table, and I’m so thankful my wife wanted to add okra to her backyard garden this year.
Miss Mattie, my parents were from North and South Carolina. My mother fried up fat back for the grease and flavor before adding her fresh cut Okra. She'd remove the fat back and then sit that on a plate for us kids to have a fat back sandwich later. She added the cut Okra and the sound of that sizzle and the smell of that fat back grease said to us that love was in the house. Now to us if there wasn't any slime in those Okra something was wrong. We loved it! Add a pot of rice, skillet cornbread or melt in your mouth biscuits, fried chicken, or Lake Trout fish, fried corn and slices of tomatoes . . . That was good eating, but we didn't touch nothing until we said grace. Oh and don't forget that large picture of lemonade. Thank you for doing fried Okra up right!

It is simple and I already have bacon and onions! I looked for Okra in five different markets and couldn't find any. I tried one more time and found some. I bought one package not knowing anything about the taste. I followed your recipe and YES I love Okra. Thanks very much. I do have a question about your recipe. Why do you add the sliced Okra to the bacon in the pan before adding the onions? Normally I would think you could control the heat more by using bacon followed by onion and than the Okra? I don't want to burn the Okra while cooking the onions. Anyway your recipe worked well and I will be making another batch today.

Thanks for this recipe! I love okra and it's great to help lower blood sugar. I substituted polish sausage for bacon. Also, added 1 jalapeno for some heat. Miss Mattie I like your recipe. I learned to eat okra about 50 years ago I guess when living in Houston. Later on after I moved back to the north west, I begin to grow my own okra and loved it. I will eat okra any way it is cooked, but finally got my husband to okra sautéed with onions and tomatoes and a little garlic. I'll have to try your version with bacon. Looks great.
In Indian cuisine we cook the okra in quarter cup of oil…till light brown ..then add the spices and whole garlic pieces..one chili chopped up finely…and then cumin powder…one cup of chopped onions..and a few green onions…sauté all till golden brown..salt.pepper to taste. We garnish this with fresh cilantro…served as aside dish for flat breads,cooked rice. Or cooked wheat granules. Enjoy my version. I like your way…other than salt and pepper..bacon can be cooked by itself to get crispy…or use cooked strips of bacon and then crush them…use as a garnish…To enhance the taste…add paprika…chili powder…flat leaf parsley…and green onions. Serve this with baked chicken,pork chops..,a slice of ham. Happy cooking. Thanks for introducing me to this style of cooking.

This is a great okra dish! I've been refining my gumbo recipe with the idea that traditionally, after the roux, onions, bell pepper and celery, the other ingredients are prepared as if they are stand alone, leftover meals melded into gumbo. I love the way you made it as your recipe looks like the tastiest that I have seen and would be my choice for making it as a meal - which after tasting it, I plan on doing. That slime is a natural thickener. U add this to other veg and you have no need for corn starch or flour. mmmm I'm tryin this.

I love okra and stewed tomato gumbo ... we always start by frying the okra in bacon to prevent slime (and NEVER add water) ... Can't wait to try this!! Thank you
