I made this for dinner It is scrumptious and I have to tell you that I fed it to my son and I and I told him it was plant-based and he about fell on the floor I told him there was no oil or salt or anything in it and he could not believe it he had three helpings Thank you Dylan!!!!!
Dillon’s cheesy macaroni What you will need Sauce ingredients 1 cup of cashews 3-6 garlic cloves 2 tbs nooch 1- 2 tbs lemon juice 1/2 tsp mustard powder 1/2 tsp crushed red pepper flakes 1/2 tsp black peppercorns 2 cans of beans drained (white and garbanzo) Veggie broth / 3 cups of water Bread crumbs ( 2 toasted slices of bread) Packet of pasta ( macaroni) Chopped mushrooms Chopped Onions Spinach ( lots of it 😉) What to do: 1- Add sauce ingredients into blender Sauté chopped onions and add to the blender and blend with other sauce ingredients 2- Cook pasta and throw in the chopped mushrooms while pasta cooks 3- Add the hot, drained pasta onto the spinach and allow to wilt 4- Add the sauce and mix well 6- Add more water/ broth/ if needed so it doesn’t dry oit while baking 5- Lay on baking dish and sprinkle bread crumbs 6- Cover and bake for 45min- 1 hour
Made this tonight and some thoughts ... sauté the garlic before blending to impart a much less intense & biting flavor. Also, an additional idea is to sauté the mushrooms next time along with the garlic and leave the garlic out of the sauce. Both then have a more intense flavor without the bite of raw garlic; this can be done as soon as the onion is done for the sauce to use the same pan. I amped up the spices in the sauce by about another half. Also, I added an Italian seasoning blend to the bread crumbs and it paired well. Loved the idea of this dish and looking forward to another go at it !!! 😋
Great ideas. I did sauté the garlic with the onions but forgot about the mushrooms. Overall, it turned out good but even halving the recipe it makes so much for just myself! Next time I will quarter it!

Oh my, I just made this tonight, and it was a winner. 1 clove of garlic was more than enough. I finally found some palatable nooch, everything else I’ve tried smelled like vomit, no, really. My husband loved the sriracha addition, I’m a lightweight, and didn’t use any. Next time I will cut up the baby spinach into smaller pieces. And very important to add enough liquid, so it’s not dry-tasting. Love this recipe, well done Dill and Reebs.

First of all, I don't care if the produce say it is "washed" you still need to wash it because it has been processed and handled and can have all kinds of germs and bacteria. One lady caught worms from eating "washed" lettuce straight out the bag without washing it.
Oh my, did I laugh out loud a few times during the preparation of this recipe. You're wonderful Dillon. Stay safe and sending love from Tasmania. Just imagine a woman in her kitchen in an old farm house in the rural forests of Tasmania cracking up over your "what the hell is that!" comment. And seriously I have never seen an onion so big before and that spoon! They say everything is bigger over there!
Finally got around to making this one. So freakin good! It reminded me of my non vegan childhood days. Mom would always make tuna noodle casserole with cream of mushroom soup and those fried onions. Can’t even imagine that now lol. But this one really brought me back.
Made this today and took some for my lunch at my Mom’s/family that were eating one of my old favorite southern meals. I ate my food and it was so delicious and filling I wasn’t even tempted! I left feeling good and honestly proud of myself, while the others were going into food comas. 😴 Thanks Dillon, your meal ideas rock!!! (we know you don’t do “recipes” 😂)

I made this for lunch today (I should say, my version of this - I can’t leave a recipe alone). I used Jovial brown rice pasta, came out great! In my next batch, I would increase the amount of nutritional yeast; and I think this dish would do very well with adding peas to it. I also think this sauce would make for a great version of the creamy green beans casserole. 😁

It is SO NICE to have the Engine 2 stuff available, and your items (to date) are mostly complimentary to Engine 2 products as opposed to competitive to them, so that shouldn't be an issue.

We usually make our food on the weekends and then just reheat it throughout the week when we don't have as much time. Sometimes pasta dishes don't always work well as leftovers because the pasta expands a fair bit and the dish sometimes dries out. Have you found that this dish is okay as leftovers? Any tips?
