    I think the most impressive part about these videos is that he is so well versed on what to do vs what not to do that when he is making the examples he can perfectly make something incorrectly but intentionally

    the key is to mix the eggs, butter and sugar really well at the beginning so they get light and fluffy and then not overmixing the flour into it

      gotta add the eggs one by one or start with just adding the yolks too. helps with proper emulsion to prevent separatingg

      Plus baking powder can be very useful for adding fluffiness.

    One day, I'll be able to use your tips. I'm saving for an oven, and it will take some time to save up for it. Thank you for motivating me.
    Edit: Woah this blew up. Thanks for all the support! I might actually look into some of the suggestions in the comments.
    To clear a few things up: I live in the Philippines. We used to have a gas oven before but it broke down easily so I wanted to buy a really good one (I guess two months of my current salary if inflation here doesn't mess it up?). Admittedly, my oven fund is still small because other more important expenses pop up, and when you're planning to make baking a regular activity you have to consider other expenses like baking pans and ingredients (the price of a kilo of sugar went insane last year in the Phils. around a 1/5th of the daily minimum wage haha) So there's a lot of factors why I said it will take time. This was more of a wishful thinking comment. This channel made me appreciate the science behind baking even more and made me remember how much I enjoyed my baking classes in HS. It made me consider being more serious about saving for an oven. That's all the comment is about. Have a nice day, everyone!

      If you're itching to start making cakes ASAP, you can try steam baking. In countries where ovens aren't as accessible, people start with steam baking.
      Either way, I hope you get to your goal 😄 I'm excited for you.

      I’m saving for an oven too! The one in my apartment doesn’t work. And I miss baking. I didn’t realize how much I relied on the oven to make food until now and all I have is a stovetop but I don’t like a lot of the foods made on the stovetop.

    At first I was upset that you didn’t take the wrapper off of the cupcakes before cutting but then I started seeing it and thinking more about it and I was like you know what it does provide a good distinguishing line

    My secret to enormously bulbous cupcake/muffin tops is to put them in at 400 and lower it to their normal temp after the first 5 mins. It shocks the sides into cooking right away and the cake has nowhere to go but up.

    I was going to try getting into baking, but i was recently diagnosed with diabetes and put it on hold. Your channels makes me want to try again haha, once i have good glycemic control that is.

    I love cooking, it’s something I enjoy so much but I have not always been a fan of baking. My grandmother is an excellent baker and I just recently started to like baking. Your tips and research are awesome. They have helped me so much and you have answered I believe all of the questions I’ve had. Little things that you think wouldn’t make a difference, really do with baking. Maybe that’s why it’s never been my thing. With cooking, there are certain creative liberties you can take and not ruin a dish. You can play around with a recipe and not completely destroy it whereas with baking it’s very much precise and so many things can change the outcome of an item. I really like how you break down these little things that make a huge impact on the final product it’s so helpful for those of us that are not bakers at heart. I am growing to love and appreciate the patience that comes with baking ! Perhaps it’s age too lol

    Hi, Benjamin. Thank you for showing and teaching us these things! Do you think you can tell us your preference for each option in the comments? Maybe for all your future videos, if possible? I'm such a newbie at baking that I can see the difference but don't know when one option would be more fitting than another, e.g. when would a denser/flat top cupcake be better than a fluffy/puffed top one?

    This channel is gonna grow fast, the videos are so good. I want to see if I can find something about bread dough cause I always screw up the part when you mix the ingredients and knead it. It always end up just sticking on every surface possible and I end up having to clean everything

      A gluten free video would be awesome! I use a standard blend of 50% rice flour, 30% tapioca or potato starch, and 20% corn flour ("maize flour" in UK, not the starchy stuff). Then, I'm supposed to add xantham gum as needed, but I usually don't. I'd love to see demonstrations of this ingredient at varying measurements!

    For a nicely "domed" cupcake, first preheat your oven to 25 degrees hotter than you intend to bake it at. When you put them in, turn the oven to the correct temperature. The slightly hotter initial heat is supposed to help the cupcake rise slightly higher. From my experience, it makes a difference!
    Also: if you're using a cake mix, sub out melted butter for the oil, and milk for the water. Boom, you've got a bakery cupcake.

    These are great tips! Another tip for cornstarch is add a bit to shortbread cookies. It makes them so soft and melt in your mouth delicious.
