    Just made this. Got the Indian bay leaves and dried Kashmiri chillis on Amazon. Did it all just right. DELICIOUS!! Couldn’t stop eating it till it was all gone. And my house smells awesome. Am going to make it again on Sunday when my daughter and her mate are coming over for dinner. Looking forward to trying out more recipes from this channel. Makes me proud to be a Yorkshireman living amongst British Asians (who are also Yorkshiremen and Yorkshirewomen).

      Thats great! I would highly recommend you check if you have a local asian store too. That way you won't need to buy off of amazon if its more convenient.

    The absolute most important part is to put the lid straight back on as soon as you tip the tarka into the daal. That’s how they get that lovely garlic smokey flavour into the dish. He mentions it in his daal bhuna video. It’s taken me years to figure that out!!! Thanks so much.

      We feed our young, elderly and sick dhall. Of course though we all eat dhall. Its incredibly nourishing and can provide a full meal when eaten with rice.
      Its one of the comfort foods of our culinary culture. Although there are a million dhall recipes, every one of them mouth watering good 😊

      Anyways as daal/dhal is written in other alphabetic systems than the many many many alphabetic systems of the world, then it can be spelt in numerous ways in other alphabet systems. So it can be dhal to some and daal to others who use the Latin/Roman alphabet system.

      @@ts4686 you are correct, it is written in a different 'alphabetic system'. That is why I, who can speak and write both Hindi and English would have a better grasp of how it can be accurately phonetically written in a roman script. Because the only thing you can do is to make sound like it does in the original language. I think i would be a better judge of that. Of course, you are free to pronounce it wrong. So it can be dhal to only those who don't want to pronounce it correctly. Of course, you are free to not want to have to do it. Also, English is widely spoken in India. People from many different states can't really speak each others language. We use english to bridge that gap. That is is why more or less all menus in urban and semi urban india are printed in Roman script. Dal or daal has been spelt out in roman script on thousands and thousands of menus in restaurants across India. The correct spelling has been established. But your boy here does not know anything about a 'dhal'. Not how it's pronounced and not how it's made. For that mater if he was even 50 % correct in how to make it i would have appreciated his effort and not bothered with the pronunciation. But his recipe is all wrong, with all the right ingredients, but still wrong from the get go. may be the tempering was ok. Call it what ever you like but please go find someone who has lived in india till they are in their mid twenties and have the daal they make. You will realise what you really are missing out if you though the bowl of mish-mash you ate was good. I also find it highly irresponsible of a professional like him to dish out what ever BS he thinks is daal. He is misleading his followers. I wonder if he does this with other cuisines that he is not familiar with. Rest is up to you man. Cheers

      Anyways m not sure who youre so upset with about their DAAL recipe. You do know you have commented on a person's comment who said that they made it for their gf, and not directly to the person who posted the video, and nowhere does it say how they made it.
      There is a massive Indian diaspora around the world, and as many recipes as there are for various dhal recipes in India, as are there as many changed ones through the various Indian diasporic people around the world, depending on where in the world Indian people were enslaved and moved around by europeans. Indian people took a horrific violent situation and turned it into some of the most diverse global, yet distinctly Indian food by developing their recipes through need. In some of these countries daal has been spelt as dhal, because a 'd' sound in English is not the same 'd' sound in an Indian language, hence the 'h' added to soften the 'd'. The europeans would not allow Indian people in many countries around the world to speak their mother tongues, hence through spelling one had to be reminded of how to pronounce words. These spellings do not follow any grammatical rules. Its purely colloquial vernacular.

    Two YT channels changed my life. One thought me to hem jeans and the other is yours. I love your recipes, I have your dishes several times a month, the fridge is always filled with base gravy, and I don't do take aways anymore because no one comes close to your curries.     OMG. Just made it. This dish is out of this world. I have been looking for this recipe over ten years from my favourite Indian restaurant that closed on me (sad story). The only thing different that I did, is that I replace Bay leaves(did not have) with Kaffir leaves.

    Made this tonight and it's truly epic. I think the secret is getting that onion and garlic really dark and caramelized. Such a great flavour that was missing until I tried this recipe

    I made this tonight and it was bloody great. I have sort of half tried to make this before but it didnt turn out right but this was amazing. I was just eating some of the leftovers cold and its really nice even still. Great job would love some more vegetable dishes just cos i tend to have those lying around and things like this are great to cook when you dont have anything in the fridge.

    This dish is sooooo good, Chef is a very straightforward teacher, he obviously loves his subject and is passionate about imparting his knowledge. A lovely simple but delicious dish, and I so envy that beautiful kitchen everything too hand and spotlessly clean. Made this old lady very happy.

    I made this. Thanks for the recipe. It wasn't the flavour I was looking for, but was nice all the same. Unlike other attempts I've made at Tarka Dhal which were bland and no one finished it, this has a good flavour and will get eaten. The predominant flavour was the bay leaf. I was looking for something with more of a garlic flavour and was thinking of using cumin and curry leaves in the tarka.

    Omgee I salivated all the way thru this😁 I could eat this daily. I live in the Scottish Highlands and have limited access to some of the ingredients ( unlike when I lived in Southall) So a wee trip to Glasgow's west end to the Asian supermarkets is in order. Thank you for sharing 😘💕

    thank you Latif, today I cooked this recipe, it tastes marvelous!
    As my body doesnt tolerate ginger :( I took galangal instead and at the end of the cooking process I added some tiny strings of lemon peel and juice - jummy!
    This dominates in taste like the ginger. The best oil for health in kitchen is ghee! I make it myself from sweet Irish butter, the best butter I know, once a month.

    If I'm in a Mediterranean mood, I could live on cheese, olives, garlic bread and red wine.
    If I'm in an Indian mood, I could live off of Tarka Dhal, garlic naan, onion bhaji and mint sauce 😉

    Latif, this was so nice to watch and learn. I have had this in restaurants before but never knew that it was done in two stages.     I have made this dish so many times in my life but today, I tried your version - oh my, I thought to myself this is better than what I get in my restaurants - it is amazing!     I love dal, first learnt how to make it years ago when I was a vegetarian and sick of eating cheese and pasta. Had no idea how to cook before then, was the start of a long journey.
    Since then it's always been my comfort food - think I could live on just that and some paratha forever.

    I like to think I make good dhal but, have to say yours is better!
    For veganuary, had you thought about putting up more veg recipes? You'd probably get a tonne of clicks for that (hint hint!).

      Bangladeshi cuisine has a lot of vegetarian and vegan dishes, latif should put up for his viewers. Add spices to any vegetables I.e the humble mashed potato and you have a Aloo barta, or aubergine mash with spices, the list is endless

    Vegan household here, I make lots of different lentil dishes, so versatile, I'll make this one now, but with just oil and no ghee.

    Love your recipes, but just want to say, as a chef we're always taught to use a wooden spoon in an aluminium pan, the metal on metal brings out a metallic taste and can discolour your food

    I haven't made your recipe but I learned this dish from being married to an Indian and I made this the other day very similar to yours I just didnt have dry red chilies, green chilies or bay leaves. Used red onion, tomato sauce from can bc didn't have tomatoes, no oil just 2 tbsp ghee lol which I liked the flavor it gave, and ginger garlic paste, I also added some extra spices a little coriander powder, garam masala, tumeric, dry mango powder, some tamarind water, cumin powder, forgot the red chili powder though. Was very tasty actually

      It does not make the slightest difference to the taste of the dish if you use stainless steel , aluminium or cast iron pans. TV Chefs peddle what are effectively "Old Wives' Tales" about hideously expensive pans resulting in better tasting dishes. No scientific studies have ever been done to this effect and if they were they would kill these utensils for which a small mortgage is needed.

    Love this one of my faves. I'm vegan but normally in restaurants they make it with Ghee - so now I know how it's done I'll make it at home just using vegetable oil. Thanks - look so delish. :)

    Amazing my kids and I lived 15 years in Malaysia and they only like Indian food. We had lunch in Indian restaurant in Florida last week it was 148 dollars too costy but worth it. Only the sound of the spoon when mixing I can’t tolerate, if you can use silicone spoon to avoid this sound 😍😍

      Kashmiri chillies are a type of chilli . You cab buy them in an Indian store . You can even buy Kashmiri chilli powder.
